My question is since I don't have the money right yet to buy an electric beater, should I wait on this recipe since it says, "beat to soft peaks" in the BEAT section? Or could I reasonably do this by hand?

You can beat it by hand but it takes a good many strokes to get it the way you want.

 Heather, if you have a Walgreen near you, look at the ads, you can buy a hand held mixer cheap. I have a Kitchen Aid, but use the cheap hand held one for small jobs (easier to grab & use instead of dragging out the big one)

I'm a lazy old woman .... I don't think I would try for "soft peaks" without a mixer.

But I know that years ago - before electricity - people made DIVINITY .......... That requires some beating.

To whip cream to soft peaks does not take much at all.  As a matter of fact I prefer to whip cream in this manner as it is so very easy to over whip cream.
The whipping to soft peaks will give your arm a bit of a work out but should not take long. 
As you whip you will notice the cream change pretty rapidly.  Just keep lifting the whip until you have peeks that gently fold over when you lift the whisk out of the cream.

This will also go faster if you have a good wire whisk.  I have several balloon whisks and a new one that has little balls on the end that help whip air into the cream.

Go for it! no worries you can do the pie.

Remember to have your bowl, whisk and cream VERY cold.  I find the best bet is to put the cream in the bowl, along with the whisk in the freezer.  The colder it is, the better it will whip up for you.  Good luck!

If you have a whisk, it will work out fine.  I agree with Marti, putting your bowl and whisk in the freezer really does help.

Hi Heather, Everyone gave excellent instructions.If you have a Walgreens around you they some times have a $10 appliance sale and they have hand mixers.I have both the Kitchen aide stand mixer and a small hand held mixer.You can make awsome whipped mashed potatoes with a hand mixer also.

Thank you all for the advice. Making sure things are cold makes sense. I'm not sure why, but I never thought of a handheld beater either. For whatever reason my mind was skipping it and only thought a whisk and an electric beater were my options. SIlly me :)

I would not try to do it by hand myself.  I do not do that many things to exercise my arm that way.  So I would be tired long before it was ready.  But the handheld beater sounds like a good option.  I probably would hold out for a cheap mixer.  Maybe even a yard sale?

Heather, when you get around to buying your mixer, make sure the head tilts back. I did all kinds of research about 3 years ago, saved my money, and bought a Kitchen Aid that came highly recommended by researchers and cooks. I didn't even think about the tilt-head until I used my new appliance. Let me tell you it is a pain not to be able to tilt the head back. Most mixers have the tilt-head, but unfortunately mine doesn't. Just a little heads up!

Some people never use a mixer but I am lazy so I use one either hand held or one on a stand

Personally, I prefer my wisk w/little balls on the end - works great! Good luck with the recipe, sounds delicious!

I sometimes use the hand whip==hate to lug the mixet anf wash all the parts.

Wecome to V V B!  I think the Walgreen idea is great.  I started w/a small Sunbeam (that I still have 30 + years) hand mixer.  In the beginning it was all I needed & I was thrilled to have it.  Good luck sweetie!
