Heather,
I used to beat cake mixes etc. with a spatula or whisk, but an electric hand mixer which you can purchase at a reasonable price, around $20 is a true life and time saver.

I have a kitchen aide stand mixer which I love,I gave it to my son and DIL.My brother gave me my mom's old Hobart it is the smallest commercial mixer made and it is a power horse. It's so old it has it's own fuse, the kind you used to have in the house before the breaker switches and it still runs like a champ.I asked for a cheap hand held mixer for everyday things and my son bought me a hand held kitchen aide, well it wasn't that cheap but boy does it do a nice job.

How about an old fashioned rotary egg beater?  I have one that is probably 50 years old that belonged to my mother in law.  Works fine.  Sometimes my hand gets tired turing the crank but other than that it is a great tool

Here's the recipe in question:  http://www.verybestbaking.com/recipes/29755/Chocolate-Lovers-Chocolate-Mousse-Pie/detail.aspx My question is since I don't have the money right yet to buy an electric beater, should I wait on this recipe since it says, "beat to soft peaks" in the BEAT section? Or could I reasonably do this by hand? Thank you in advance!

When all else fails you could also get a hand held egg beater with a crank handle.  At least I THINK you can still get those.  I know my sisters and I had a ball using them for our mom when we were little.  :)

GRANA  here; Hi HEATHER;  In the OLD DAYS, I used a wire/baloon wisk & a copper bowl to beat egg whites stiff; It was time consuming  & good armm excercise but it  worked just fine.If you don't mind the labor,do it by hand; *****starting w/room temp egg whites  for a better stiff peak formation
For whipping cream chill bowl; beaters & cream well  first for better results  A baloon/ wire wisk wil work fine( plain or fancy new fangeled will give you a feeling of accomplishment that I,personally, enjoyWink
.I made many merengues by hand; much easier once I used room temp egg whites
Surprised

I have a Sears hand-held mixer that was a gift in 1971.  Don't know how the ones they make now hold up, but mine has been going strong for over 40 years.

Heather, you can't go wrong with a $4 hand mixer.  You never know, it might last 40 years too.

I just might have to pick up a small hand mixer if it is $4.00. Also there are times when I don't want to drag out the stand mixer or the food processor.  Not to mention it would be great for my Grandson to have his own mixer at my house so he can make things when he is here and get the feel of dough with a hand mixer rather than the stand mixer.

Heather, when you get around to buying your mixer, make sure the head tilts back. I did all kinds of research about 3 years ago, saved my money, and bought a Kitchen Aid that came highly recommended by researchers and cooks. I didn't even think about the tilt-head until I used my new appliance. Let me tell you it is a pain not to be able to tilt the head back. Most mixers have the tilt-head, but unfortunately mine doesn't. Just a little heads up!

You must have gotten the model that has the bowl lift feature where the bowl moves into place rather than the head moving.  That takes some getting used to.  I have used one in our church kitchen.
My own Kitchen Aid is about 30 years old now and it is a model that the head tilts.  It is truly a work horse in my kitchen, I use it for all kinds of mixing - cookies, cakes, meringue for pie, bread dough, meatloaf etc etc etc.

My mother got a baby present from my father when my sister was born.  He bought her a Sunbeam stand mixer.  My sister is 71 years old and Mom was still using the mixer until she died 2 years ago. How's that for a long lived mixer?  She used it a lot too.  It had a grinder attachment and she'd grind green tomatoes, apples and raisins to make mincemeat and she made a lot of it to can.  She baked several times a week so it got a lot of use
