To whip cream to soft peaks does not take much at all. As a matter of fact I prefer to whip cream in this manner as it is so very easy to over whip cream. The whipping to soft peaks will give your arm a bit of a work out but should not take long. As you whip you will notice the cream change pretty rapidly. Just keep lifting the whip until you have peeks that gently fold over when you lift the whisk out of the cream.This will also go faster if you have a good wire whisk. I have several balloon whisks and a new one that has little balls on the end that help whip air into the cream.Go for it! no worries you can do the pie.
