Nancy, I have been trying to make the cookies with the candy bars inside. I looked at your recipe, but could not use it as it has peanut butter in it and my grandsons are both allergic to peanuts. I also wanted to use "Milky Way" bars instead of Snickers.....same reason allergic to peanuts. I tried to use a shortbread dough, wrapped each little bar in the dough, making sure it was sealed. Then I put them in the oven on parchment paper (thank goodness). Almost all of them "leaked" candy bar and were gooey and sticky. Do you have a magic formula I could use? I thought a caramel drizzle would look good on them, but don't have a recipe. Can you help? Anyway the cookies weren't very good looking, but they tasted good!

hmmmmmm ..... I wish I were there!
Lots of questions/suggestions ......... Are the Milky Ways Jr. size or Mini size?   I 'think' only the Mini size will work and the original recipe tells you to cut those in half. I use the whole bar but in a cookie like Butterfinger I cut the 'sharp' corners off. Would that tedious effort help?

A shortbread cookie is so tender ......... would the recipe for regular old chocolate chip cookie dough work? Just omit the chips and nuts. And add some extra flour so the cookie doesn't 'flatten' so much.

When you are wrapping the candy in dough be certain there are no 'cracks' - openings from where you folded the dough around the candy.    Be careful placing each one on the sheet.... try to make certain the thickest part of the 'ball' is on the bottom.

When I started making these things I had several cookies in each batch 'leak'.     I became more careful wrapping each one and placing it on the sheet thick part down. Now a leak is rare - it still happens but not often.

How about using more dough for each cookie?

With my lack of knowledge I do think the problem is the dough .... shortbread dough is tender.

Try it again with a different dough and let us know how it goes.   Good luck!

Thanks, Nancy for your advice. I did buy the "mini" bars, so my next step is to try using the chocolate chip cookie dough with added flour. I just put out some butter to soften, so I will let you know how they come out!
P.S. My great niece is going to Stephens college in the fall which is in Columbia, Mo. Are you anywhere near there or are you closer to St. Louis? ( My niece, her mother is also a Stephens grad, as well as my sister)

Barb -- Good luck with the cookies ...............
I'm much closer to St. Louis than Columbia, but in summer of 1961 I was at Stephens for two weeks for Girls' State. What a gorgeous place.

I'm so impatient about butter softening .... I put one or two sticks in the microwave, sap it 8 seconds, turn them over and zap another 8.

My caramel drizzle recipe is:
1/2 cup packed brown sugar
1/4 cup heavy whipping cream
1/2 cup confectioners sugar
In a small saucepan, bring brown sugar and cream to a boil.
Remove from the heat; whisk in confectioners sugar.
Immediately drizzle over cookies.

I don't care very much for this "caramel" .... I think it's a bit sugary - not smooth - and it's very thin.
Last time I made it I decided that in the future I would use melted candy caramels.... but I haven't
tried that yet.

Barbara, in addition to Nancy's suggestions I would suggest freezing the candy after you cut it to the proper size. The frozen candy may help the dough hold together and the candy may just stay solid longer so as to allow the dough to set before it starts to ooze.
If all else fails try making them as a bar type cookie and pat half the dough into a pan then put the candy on top and top with the rest of the cookie dough. I would line the pan with parchment to make it easy to remove. Press the dough around the candy so you have almost little ravioli looking cookies lined up in the pan.

Yeah!! Sucess!! Thanks Nancy for your help!!! I made the cookies with the chocolate chip cookie recipe, but I used 2 1/2 cups of flour....next time I think I will use a couple more tablespoons of flour . In any case, I chilled the dough, which turned out to be very important and so much easier to work with. I do think I will try the caramel drizzle and also use a chocolate drizzle too as they look a little like chocolate chip cookies without the chips, so they need something to jazz them up a bit.
I have been looking for some kind of cookie that my grandson ( who is going to college in New York in the fall) would like that I can send to him. I think I have found the answer. Thanks again!!!!!

The results were great. I added extra powdered sugar to the caramel glaze to make it thicker. Worked great. I then put a chocolate drizzle on top.

I clicked on the cookies and got a larger picture......the cookies taste a little flat..and now my computer screen needs cleaning.
The cookies sure look good. I have several projects going this week but I just may have to squeeze a cookie baking session in.

Thanks Nancy for posting the picture, you had better luck than I. As for the drizzle, I just used a spoon and moved it back and forth across the cookies. I thought about using a ziplock, but I always seem to make more of a mess getting the stuff in the bag. So, i just said forget that and used a teaspoon.

Thanks for the icing instruction Barbara .....
When I try to do that - get lots of thin lines - I just can't do it with a spoon. With a spoon I get big, uncontrollable globs - not skinny lines.
So I melt the chocolate chips in a freezer zip-lock, cut off a tiny corner and squirt that. If the temperature is absolutely perfect - not too hot, not too cold and the corner clip is not too big and not too little and then ......................
I think pretty squiggles on top of a cookie are difficult to do.
