I have often found packages of butter where the wrapper is "goofed up" and the measurements are on half the wrapper and the other half is blank. I have found a pretty good way to measure a quantity of butter, Crisco, peanut butter or other substance like that is by "displacement" I will fill a 2 Cup measuring cup minus what I need to measure for the recipe. I put a spoon full of Crisco, peanut butter or margarine in the cup and keep going until the water mark hits the measurement I need. Drain out the water and you have your measured ingredient. Much easier to clean out the cup as well. Another handy hint...measure out oil in your measuring cup then measure any sticky stuff like molasses or honey. It will fall right out of the measuring cup.

Nikki, I never think of the displacement method. I'll have to remember that, I do use the oil then sticky stuff trick though.
