A few suggestions for you.
Roughly process and use as part of a base for a crumble topping for a cobbler or crisp.
I have a recipe in my "recipe box" for a Vanilla Tea Cake.  It calls for a 12 ounce box of vanilla wafers in place of flour.  I think you might be able to dry out the granola bars so they can be ground and use in place of the vanilla wafers.  I would place them in a warm oven and just allow them to dry. (This would be for the moist ones.  The dry ones could be ground as is).
There may also be a recipe in my box for an Oatmeal Carmelita Bar if so use the granola bars in place of the oatmeal called for in that recipe as well.
You could also try making oatmeal cookies with them.  the dry ones just break apart until no longer clustered together. Don't think the moist ones would work in cookies.
