The Junior's Cheesecake recipe is awesome!!  I have their cheesecake cookbook and make it all the time!  I will post it here but it might be easier if you Google it and print it straight from the internet!  The only thing I do differently is instead of the sponge cake crust I use a graham cracker crust. Wink

This site has lots of cheesecake recipes.  Type "cheesecake" or the flavor you want like "cherry cheesecake" in the SEARCH box on the top right of this page.

This site is great lots of good recipes. There is a Pumpkin Cheesecake the is very good.

IHi SYLVIA;
 GRANA here;
CHEESECAKE RECIPEserves 8

kThis is a NewYork style  cheesecake ( very dense) that I have been making for many  years
 You may use sugar replacement to lower the sugar /carb count, as well
Top as you like; fresh berries,crushed pineaple ( well drained); any fruit pie filling, you desire.
INGREDIENTS:
 1  ready to use 9"graham cracker orcokie  crust ;homemade or store bought)
FILLING:
  2 pkg low fat or fat free "cream cheese"
2 eggs or =( 4 egg whites or 1/2 cup Egg Beaters
 1-2 tsp  pure vanilla extract, to taste
 1/2 -3/4 cup  sugar or equivalent; to taste
 DIRECTIONS;
 Place  pan w/ crust, on a  cookie sheet to avoid messy boiloversSurprised preheat oven to 325'( rack in center position)
 Using electric mixer  combine all ingredients till  smooth
 Pour into crust( on sheet)
 Place on center rack of oven & bake 30-40 minutes till set et & dry on top.
Cool to room temp; cover loosely  & chill several hours till as cold as you like( we like it  very cold
 Slice as as desired .
Top w/ fruit choice, serve enjoySmile
