this recipe for easy vanilla ice cream calls for 5 eggs well beaten then added. im concerned about them not being cooked first. have any of you great vbbers out there ever made this and if so how did it turn out. also, do you have an easy freezer ice cream recipe any flavors without using an ice cream maker to share? any help with this will be appreciated.
EASY VANILLA ICE CREAM
MAKES: 1 QT
INGREDIENTS:
5 eggs
pinch salt
2 cups sugaer
2 packs instant vanilla pudding mix
1 can evaporated milk
2 quarts milk
DIRECTIONS:
beat eggs well. add salt. blend in sugar and pudding mix. add milks. stir well.
pour into plastic container and freeze overnight.

we have never cooked our ice cream recipe when we made home made ice cream in an ice cream freezer------------------ i was much older when we heard that might not be safe----------but we still made it that way----------------also a lot of dressings are made that way-------just be sure your eggs are fresh

There is such a thing as pastuerized eggs. Sometimes health stores and even regular supermarkets have them. I have always used a custard style base for my ice cream which has been cooked to 160 degrees. I also have a regular Cuisinart Ice Cream machine, that I use to freeze the ice cream.
Cook's Magazine or Cook's Country Magazine has a recipe for both chocolate and vanilla ice cream that doesn't call for a machine. There is also a "camping" recipe that can be used without a machine. It consists of a plastic ball that you add the ingredients, and ice and then roll it around until it freezes. I'll look in my magazines and see if I can find the one from Cook's.

I found it in the June/July 2010 issue of Cook's Country Magazine

Magic Vanilla Ice Cream
1/2 cup sweetened Condensed milk
1 ounce white chocolate chips ( you can also use a bar, chopped fine)
1 Tablespoon vanilla extract
Pinch of salt
1/4 cup sour cream
1 1/4 cups cold heavy cream
Make base: Microwave sweetened condensed milk and white chocolate in large bowl until chocolate melts, stirring halfway, about 30 seconds. Let cool, stir in vanilla, salt, and sour cream.
Whip Cream: With electric mixer on medium-high speed, whip heavy cream to soft peaks, about 2 min. Whisk 1/3 of whipped cream into white chocolate mixture, Fold remaining whipped cream into white chocolate mixture until incorporated.
Freeze: Place in airtight container and freeze until firm, at least 6 hours or up to 2 weeks.
If you plan to store the ice cream for more than a few days, place plastic wrap directly on its surface before you freeze it.

You could also use Egg Beaters in place of the eggs if you do not want to use the whole fresh eggs.
As someone else mentioned you can find pasteurized eggs in the grocery store.

we were always told that the sugar actually "cooked' the eggs----------------do you not eat caesar salad or raw oysters----------or rare or med rare steak-------------how about sushi? -----------------or curing meatsor fish with salt---------no flames one of my b.i.l's who never ate anything that was not overcooked-----------yet he almost died with e-coli

and we ate a lot of that ice cream on hot sunday afternoons at church socials without anyone getting sick------------------

You are so right Nellie. Even with all the health inspections by the government, think of all the recent health scares lately. I take a lot of it with a grain of salt since they started that "eggs are bad, bacon is bad", then "eggs are good, bacon is good". We can't control everything unless we grow our own food and raise our own animals for meat, which isn't truly practical in most cases. All we can do is trust our own instincts.

When I was a child we always had raw eggs with a little salt and paprika that we dunked our bread into. Never got sick. I know people who won't buy any kind of eggs now because they're afraid of what MIGHT happen. Don't think I want to live that way.

I should mention if you do decide to use the raw eggs do not allow young children, elderly people, anyone with a compromised immune system to eat the ice cream.

There is a lot of things we use to do that now is suppose to be bad for you.
Raw eggs in Ice Cream is only one of them. We had a lot more fun when I
was a kid then klids do today. We didn't have all the electric things that
they have today but we made our own fun outdoors and with friends.

The best ice cream I have made uses a custard base so the eggs are cooked. Draw back is you have to plan a day or two in advance as the custard needs to be chilled for 24 hours. Then again it takes that long for the container to freeze.......and an extra week to make room in the freezer for the container.

Nikki, I keep my ice cream maker part that has to be frozen in the freezer at all times!! I'm always ready to make ice cream!! (Usually the custard only needs to refirgerated for 8 hours at most))
We were given a package of ice cream fixin's from William Sonoma at Christmas. (flavor Chocolate -Peppermint. It was a powder with peppermint bark to chop up and all you had to add was whipping cream and half and half. It was really rich and delicious!!!

Barbara..that means I would have to remove something from the freezer in order to get the container in.
You know I really should start going through the freezer and re discovering what is there.

I think starting next week I will "shop my house". I will only purchase fresh vegetables for as long as it takes to eliminate enough of the items I have in my freezer so I can get the freezer container for the ice cream maker in the freezer.
I will use freezer and pantry items only.
To make this easy and something I can monitor I will begin on Feb 1st.
I wonder if I can do this!? I wonder how much I will save? I wonder what is in there?
I will keep y'all posted on the progress.
