I had the best salad this weekend.  It was baby lettuces, thin slices of apples, thin slices of red onion, goat cheese, and candied pecans with balsamic dressing.  Does anyone have a good recipe for making candied nuts?  I'd really like to duplicate this salad!

 Sorry no help for that from me; I will be watching out for  posted  recipes/reply  so that Ican  try to duplicate  a similar  fave salads that uses them....also uses fresh strawberries, apple dice& goat cheese!,

Recipe I've been using for almost 40 years .......
Sugar 'n Spice Nuts
2 cups sugar
1/2 cup water
1/2 tsp salt
1/2 tsp cinnamon
2 1/2 cup nuts -- pecans or walnuts.
(I use pecan halves)
Combine everything - except nuts - in large saucepan.
Cook over low heat to 236 - 240* (soft ball stage)
Pour in nuts and stir until creamy. Pile onto waxed
paper and separate clumps with two forks.

I'm certain you could omit the cinnamon to have "plain" sugared nuts.

MRS RICHERT'S SUGARED WALNUTS
1 cup brown sugar
1 tsp grated orange peel
1/2 tsp cinnamon
6 Tbl milk
Boil to soft ball stage.  Add 1 tsp vanilla. Stir in walnuts.
Spoon clumps onto waxed paper.

Use as many walnuts as the liquid will hold.

Laughing hee hee -- I love that recipe too.  It works like a charm and tastes even better.  I include it in piles of fudge, divinity, peanut brittle and other candies for fine Christmas gifts.
After Christmas I buy many of those very light weight metal platters when they are 75% off.  They are great for giving stuff the following year.

candied cashews
take 1 cup sugar and boil in 1 cup water and boil till it dissolves well. add 1 cup whole or halved cashew and stir on flame until the sugar coats the nuts. cool on aluminium foil or plate.store in air tight containers.i use food colours like pink, green, red to have different colours in sugar syrup. they make a great party favour

Fran -- LOL LOL LOL -- Right now I'm trying to make the recipe you posted.  Of course, I blame ME, not the recipe but, lol, I'm not having much luck.  
First I found the boiled butter, sugar and syrup mixture was very small to coat 1 1/2 cups pecan halves and it was SOOOOO stiff and sticky.
When I dumped the pecans onto the foil covered cookie sheet there was no way to separate them -- they were in tight, almost hard clumps.
I waited until they were almost cool enough to pull apart by hand.
Now they're  in the oven ........... How on earth do you stir them?

One thing -- they are so shiny and pretty -- much nicer than the sugared ones I always make.

Amazing!!   Barbara, do try Fran M's recipe first.
It's 10 times more difficult and takes 10 times as long as mine but it's worth every effort. 
My sugar n' spice nuts make a very good candy.
Fran's recipe makes a great nut for a salad .... I am astonished at just how crisp and delicious they are. 
I used pecans and will soon try walnuts. 

Fran - thank you for such a good recipe.

I will try this this weekend.  I love a spinach salad with berries and nuts with a bit of feta or blue cheese.  I happen to have some pecans that I found in the freezer so this is perfect timing.

I tried Fran's recipe yesterday, and yes it was a little harder than some, but the results were worth it.  The hour in the oven was the key.  Thanks Fran!!

I want to say "Thank You" again to Fran.  This is such a special recipe and so much fun to serve.  We're having a wedding shower for a wonderful young woman .... I'm taking my usual American cheese sandwiches but I'm making Fran's pecans for the salad lady's speciality.
