I almost always buy C&H brand dark brown sugar - sometimes a bag of Great Value, Wal Mart's brand, to mix with C&H. This morning I was in a local store, Schnucks, and bought a bag of theirs.

Brown Sugar??? Well, I'll be.........

I almost always buy C&H brand dark brown sugar - sometimes a bag of Great Value, Wal Mart's brand, to mix with C&H.
This morning I was in a local store, Schnucks, and bought a bag of theirs.
As I dumped out the Schnucks bag I saw the Ingredients: Sugar, Molasses. Huh?
I found a bag of C&H and its Ingredients : Brown Sugar.
I called C&H's 800 number and asked about the ingredients ......... which are sugar and molasses!
I didn't know that. I have no idea what I thought made brown sugar.

I posted a "recipe" a while back for making brown sugar with Molasses and white sugar. If you want dark brown sugar, and that is a bit harder to find than the light brown just add a few table spoons of molasses to your brown sugar.
I think the post was under the heading of Molasses...some one was wondering what to do with it.
I think I also posted the recipe for Sticky Ginger Squares at that time as well.

In general for a cup of white sugar a few tablespoons of molasses will do, the more molasses the darker the brown sugar will be. I just put the white sugar in a container with an airtight seal add the molasses and close the container and shake, shake, shake. A Zip Top bag will also work and you can sort of squish it into submission.

Nikki -- When I read your post on making my own brown sugar I was so astonished --- using molasses to make your own brown sugar!!! -- that it didn't 'sink in. I couldn't imagine making my own. I coudln't imagine using molasses and white sugar to make brown.
That was as foreign as making my own baking powder - lol.
I'm a slow learner .......... and I do learn a lot here thanks to people like you! It just takes me awhile.

One of my little friends was from Puerto Rico & I told her I used an apple slice to keep brown sugar soft. She said, "Everyone knows that a cracker will keep brown sugar soft!." So each time I open a new bag of brown sugar I add a saltine cracker & I think of her. She died at the age of 41 and adding the cracker keeps her close to my heart. To tell the truth, the cracker sure seems more sanitary than an apple slice.

For years - until I turned into a constant cookie baker - I used a half slice of white bread in the brown sugar container.
Now I bake so much the sugar doesn't get old.

I have "discovered" a product called Lock-N-Lock. These plastic containers are great. They are airtight so perfect for brown sugar. (Also no more leaking containers in the refrigerator) I have large ones for Flour, Sugar both white and brown, and Powdered sugar. I also keep rice, Oatmeal, pasta and my chocolate chips in Lock-N-Lock containers.
I wait until I get a coupon from JCPenny then I go get the pack I "need". They come in a variety of size combinations. The little ones are handy when packing for a picnic just the right size for mayo or a topping for a salad.

I keep my brown sugar in the original bag.....tighten it up with a rubber band....and put it in one of those plastic coffee cans (like Folgers or Maxwell House) and it stays soft and useable FOREVER!!

I have just about everything in a Rubbermaid plastic container from Wal Mart ......... I love plastic containers so I'll be looking at Lock-N-Lock the next time I'm in Penney's.
But I never even thought of putting chocolate chips in a container!! What a good idea.
I buy bag after bag and just toss them in the freezer. Any open, partially used bag is in the refrigerator.

Now that is something interesting. Never new bread could brown sugar fresh. Always bought just enough so that I wouln't have to save it. Thanks I'm gonna try that.

Thanks everyone for all the great ways to keep brown sugar soft. I usually don't use the entire bag and end up with a lump. Although I have been known to microwave it until soft but if you don't use it right away it gets hard again.

Tiffani -- first, welcome to VBB. It's a wonderful place to 'talk' and read. Please post your favorite baking recipe.
About my brown sugar ....... in the past (when I wasn't using so much) I would find a bag of brown sugar was HARD, but putting in a slice of bread always softened it in a day or so. And then the bread gets hard as a rock ..... I dispose of it and add a new slice.
Well - I use half slices of bread.

Rather than dealing with the bread, etc. I treated myself to a Pfaltzcraft brown sugar contain and it does work! My brown sugar does not get dried out and the container is pretty enough to leave on the counter with my other cannisters.
