I am not a beginner baker, but my family used to make this puffy, sweet tasting pastry every Christmas and I can't remember how to make the dough. We used to call them Panzarotti "Broken Bellies".  I would like to revisit this part of my childhood and pass the recipe on to my children.

Gale, I think it would be fun, as well as delicious to try to make ricotta.  Would you please share your recipe?  I can imagine a meal of home made lasagna with home made ricotta and then a canoli for dessert!

HI Nikki,I have two recipes that I use one with vinegar which I use for savory dishes and one with lemon juice that I use for deserts.I made chocolate cinnamon pizzelles and filled them with the ricotta and it was so good.I wanted to make pizzelles now but my sweet little puppy chewed the cord and I haven't had a chance to take it and get it repaired.I have canoli forms and I was messing around with the pizzelle maker and thought I would make them a little fancy and rolled them on the canoli forms when they came off the pizzelle maker and then sprinkle powder sugar on them they were good,then I filled some and those were even better.I'll try to post later if nothing is going on I have to leave and pick up Hubby and do a little grocery shopping.I'll post here.

I made my cannoli shells twice.  They are a pain in the tusch to make!!  I found a market that makes the shells and sells them empty so I take the short cut and buy a few.  Believe it or not I am the only one that likes them so I am better off not making my own shells any way.  And I never buy pre filled ones, they are often soggy and just don't taste good.  When we go out to a restaurant that has them on the menu I always ask if they are already filled or if they fill them to order.  And I dislike citron in the filling, chocolate is ok.
When you get around to it I would love the ricotta recipe, is there a real difference in the two other than the acid used? 
My sister loves pizelles but I never did like them much.  I guess she likes them because of the anise flavor and that is why I don't like them.

By the way I had a cat that chewed electrical cords like crazy. Had to repair my vacuum cleaner cord 3 times, several telephone cords.  Amazing that cat lived as long as he did.

Merry Christmas to everyone! I tried the website you gave me and it kept kicking me over to the foodtv network and they didn't have any recipe of that kind. I did try to make the pastry using a pie dough and it was ok, but not what my Mom used to make. I will keep trying.

Many years ago my sister in law and I made cannoli.  We made our own shells which was a pain.  It made it a little easier when I got the bright idea of putting the dough through my macaroni machine.  My husband and I did the frying.  They are very hard to get off the forms, but they do come off.  If anyone wants the recipe for the shells, let me know and I will type it.

This is the recipe we used for the filling:

3 lbs. Ricotta cheese
l/4 cup semi-sweet chocolate pieces or grated sweet chocolate
2-1/2 c 10x sugar
2 Tablespoons chopped citron
10 candied cherries, finely chopped
l/2 teaspoon cinnamon

Beat ricotta one minute with electric mixer.  Add sugar; beat one minute.  Add other ingredients and beat until blended.  Refrigerate. covered, 2 hours.  Fill shells.  Garnish ends with chopped pistachio nuts.  Sprinkle with 10x sugar.

As I said, if you want the recipe for the shells, let me know and I will type that too.

I have this recipe in a cookbooklet we did for our Rosary Altar Society at Church.

This is the recipe for the Cannoli Shells:

3 cups sifted all-purpose flour
l/4 teaspoon cinnamon
salad oil or shortening for deep frying
1 Tablespoon sugar
3/4 cup Port Wine
1 egg yolk, slightly beaten

Sift flour, sugar and cinnamon and add Port.  Blend with fork.  Knead about 15 minutes, until dough is smooth and stiff.  Refrigerate, covered, about two hours.  Slowly heat salad oil 3/4 inches deep in shallow pan.  Roll one third of the dough to paper thinness, making a 16 inch round.  (This is where I used my macaroni machine to help with the dough because it is very stiff and  hard to roll out.)  Cut into 5 inch circles with a glass.  Wrap a circle loosely around cannoli form*.  Seal with egg yolk.  Fry two at a time.  Drain on paper towels. 
Carefully remove forms.

*Cannoli forms available in housewares department.
