This is an awsome recipe a different way to use those big zucchini : CRUST:4 cups of all purpose flour, 2 cups of sugar, 1 teasp.cinnamon, 1/2 teasp.salt,1 1/2 cups of cold butter. FILLING: 8-10 cups

Gale I made it, using all the zucchini I had picked.  We had it for supper last night with cool whip.  Very good and a great way to use all those zukes.  Thanks.

I don't grow any produce but some friends at work gave me some squash from their garden.  I took it to my brother - he was cooking out on the grill yesterday.  He had a great time cooking it for family and friends.

i brought a couple extra zucchini to work as there's a guy who cooks.  He said he cut them up, sprinkled on a little olive oil, salt and pepper and roasted them in his convection oven.  He thought they turned out very good.  Nice to have an outlet for extra zucchini

Thanks for the reminder!  I made a "mock apple pie" & fooled one of our area chefs!  You can do the same w/any summer squash!

Hi Lisa,I have made a mock apple pie the same way and it is very good.Last summer I made fried zucchini with grated zucchini,just like potatoe pancakes and that was very tasty also.

Gale, thanks for the recipe.  My sister always puts in more zucchini than she needs and I always "help myself" this will be a recipe I make and bring back to her.

Gale, could this be done using the yellow summer squash or pattypan squash? I would not see why it couldn't but just wanted to check.

Hi Nikki,I don't see why you couldn't.I think I used the yellow squash in the mock apple pie that I made last year.The zucchini is a little bit firmer,but that's the only difference,
