Here's something I used to do with brownies ---- It would work with whoopie pies too. I'd bake some good brownies with lots of pecans in the usual 9x13. Let it cool. Remove any "hard" edges. Slice into three approximately 9 x 4" slices. Put one slice on a serving plate and cover it with slices* of ice cream, put on another brownie slice. Cover that with ice cream slices. Top it with the last slice of brownie. Ice the whole loaf with whipped cream and put back in the freeer. You can decorate it or just leave plain. Cut into slices to serve. *Ice cream in a rectangular carton makes great slices. Just tear off the cardboard and slice to fit on the brownie loaf. What I'm trying to (slowly) say is to fill the Whoopies with ice cream!!

Sounds yummy. Brownies are always good and with ice cream even better. Making a loaf of it would be a good way to do a dessert ahead. Have it ready in the freezer for a super dessert when needed.
