In Response to WHOOPIE PIES:
I was going through a new Amish recipe book that my son gave to me as a Mother's Day gift Whoopie pies: 1/2 cup of shortening, 1 cup brown sugar,packed, 1 egg, 2 cups of flour, 1/4 cup cocoa, 1 teas.baking powder, 1 teas.baking soda, 1 teas.salt, 1 cup milk, 1 teas.vanilla.In a large mixing bowl, cream together shortening,sugar and egg. In another bowl mix togetherflour,cocoa,baking powder,baking soda and salt.in another small bowl mix together milk and vanilla.Add the dry ingredients to the milk mixture and then into the creamed shortening mixture beat until smooth.Drop batter onto a greased cookie sheet,you should get about 18, you need an even number,2 cookies for each whoopie pie.Spread the batter into a circle and flat,each cookie should be about 4 inches across.Bake 350* for about 15 min.firm to touch and cool completly on cooling rack Whoopie pie filling : 1 cup shortening,1 1/2 cups powdered sugar, 2 cups marshmallow cream, 1 1/2 teas. vanilla. in a bowl beat together the shortening,powdered sugar,marshmallow cream and vanilla. When the cookies are cool spread a generous amout of filling on the flat side of a cookie and top with the second cookie,pressing down gentley to distribube the filling,wrap each cookie with plastic wrap and store in a single layer.Recipe makes 9 Whoppie pies.My local grocery store makes what they call GOOBS,during the fall season they make Pumpkin Goobs.I see no reason you couldn't make a soft pumpkin cookie and assemble it with this filling and have pumpkin Whoopie pies.Make any favorite soft cookie and fill it in this manner. My husband's mother always made woopie pies, gobs or whatever you call them in your area. I used to make them for he and our children as they were growing up. The pumpkin woopie pies are awesome, too! I guess I'd better dig my old recipe out and get baking some woopie pies! Thanks for the reminder of this wonderful treat.
