Nikki, Thanks for this recipe. I have been thinking of making pumpkin whoopie pies and I don't care very much for the fluff. I think that this will be closer to the one I had in IN this past fall. It was in a Amish bakery.

It is exactly the type of whoopee pie I used this filling for.
If you want flavor it with a bit of pumpkin pie spice for a bit of extra spice. Or if you happen to have crystallized ginger a bit of that diced up would be great.
