White Chocolate-Ginger Cookies

This was a huge hit at a recent cookie swap I hosted. I made the Original Tollhouse Chocolate Chip cookies with white chocolate morsels and finely chopped candied ginger in place of semi-sweet morsels

I also prefer dark brown sugar to the light but if I can't find it or I will sometimes get the huge bag at Sam's or Costco I just add a bit of Molasses to the light brown that gives me the dark brown and costs less! If I run out of brown all together I use white sugar and add 2 or 3 tablespoons of molasses to make brown sugar.

It is 10:20p.m. here in CA and I don't have the pistachios or the apricots and
I just got groceries today!!   Thank you Nikki for another great recipe and the
tips!!

Sometimes I add Butterscotch morsels and chocolate morsels to give the cookies a different flavor.

Hey Carol -- I have pistachios and apricots!! Wouldn't it be great if we lived near each other?!    We could easily cook what we wanted.

Nancy and Verlee,  It sure would be great to have someone near to bake with.
I never have pistachios or apricots in the house and now I'm going to have to
keep them in stock.  My stepson built me a pantry a year ago and I have already
filled it.  I need another!!! My husband said if I had another one, I would fill that
one too!!  lol lol  I will never have enough room!! lol lol
