Meatloaf, mashed potatoes, gravy, corn, harvard beets for both of us, hubby also had cole slaw & bread & spread & I had small tossed salad.

Spinach salad!!  I haven't had a spinach salad in years and I love 'em.

I made soup for dinner.  I had a spicy soup, made  with a bit of chicken broth some red pepper flakes and a bit of peanut butter added I had some Japanese udon noodles and tossed them in with some frozen soy beans.  It was just tossed together but I would make it again had great flavor.
My husband had noodle soup as well but no spicy pepper flakes and no peanut butter.
Will have a bit of pineapple later while I am watching TV.

I wasn't on yesterday, I had my leg elevated and putting on ice packs on my knee.  We had freezing rain and snow, took Jinx out in the morning and slipped down the steps and my knee popped. Wow, did that smart and I was in pain all day.  Still hurts today and icing as much as I can...I still can't believe it happened, I was being so careful!!

Wed. night was Cheeseburger and Spinach/Pasta Salad with Feta Cheese.

Tonight was a Shrimp and Penne pasta in a Lemon Sauce, Brussels Sprouts and Peas.

 Today, THURSDAY; While” downtown” doing business: we planned Lunch out at the Vietnamese noodle house:  fresh rolls (  un-fried egg roll appetizer)Pho (choice): chicken, beef or seafood)The noodle house did not open on time .We waited outside in the bone-chilling  wind for an extra 15 minutes( common for this place;  & finally we went instead to the San Francisco Kitchen for their Asian style buffet, across the street They opened 7 years ago & only recently became wheelchair accessible.The price, for the whole    buffet was the same as a bowl of Pho.Our  waiter also  the host &  bartender  took excellent care of us.Even though it was a buffet; he offered to bring refills of soup & appetizers. The food was much better than most buffets; more exotic choices; for the true lover of Asian foods; like us:
NOONwe didn't have all of it; just   "a taste" of everything w/more of a few special  items.
CHOICES:Chicken dumpling soup w/ fresh greens & tomato dice Hot & sour soup w/tofu cubes Salmon maki rolls; Vegetable maki rolls w/crispy noodles Wasabi [ green horseradish] & pickled ginger slices Gyoza ( Steam-fried dumplings)  Spring rolls; w/ Asst dipsBeef& broccoli; very fresh; Sesame chicken,  Thai style noodles;   curryflavored Angel hair noodles;  steamedJasmine rice; vegetarian fried rice;  Vegetarian lo mein
DESSERTS:3 fresh melons, cut into chunks: cantaloupe; honeydew & watermelon Petite fors (tiny cake  squares)Hot tea ;They had an entire, separate  menu of teas to choose. I, as usual,  had brought my own fave tea bags from home. The waiter didn’t bat an eye; he just brought me a  tea pot of very hot water, so I could brew own
  tea.Smile 
Hubby got Jasmine tea;so fragrant, I could smell it while he sipped it. I got to take one sip & might just order Jasmine tea, the  next time we go there.Undecided 
  
DINNER:: ME: no real appetite after that big lunch so I had oat meal & hot cocoa
Hubby added several pieces of just baked; still cooling oatmeal banana-nut strawberry choco-chip cake

Nancy - Sorry, but I prefer not to use dressing on my salads.  I do add mandarin oranges, fresh strawberries and sliced almonds to the spinach.  My husband uses bottled Dorothy Lynch salad dressing on all salads at home.
