The corned beef is simmering, the red skin potatoes are scrubbed, the carrots, onions, and cabbage are ready to go in when the meat is nearing the end of its cooking time.  The soda bread is waiting to be cut......and we will sit down for a scrumptious dinner!!  This only happens once a year (corned beef, that is!), so we really enjoy it!  HAPPY ST. PAT'S DAY TO ALL!!

Well. since it is St. Patty's Day, and I have no funds for corned beef & cabbage, etc., I will make a sheperds pie from scratch with my hamburger, a salad, and peanut butter cookies for dessert.  Smile

Breakfast for dinner.  French toast, scrambled eggs and bacon.  For dessert, a version of brownies to celebrate St. Patrick's Day.

Again - I don't have a clue.  Yesterday I moved a nice pkg of pork chops from the freezer to the refrigerator so they need to be cooked tonight.
Maybe sauerkraut??

Got a meatball sub from Subway. I WALKED THERE AND BACK. It felt so cool to be able to walk a block and back. Still took the cane but just for support if needed. I know it is estimated 6-8 weeks for complete healing so I will take it easy for awhile longer. I would love to be able to start really cooking again.
