I had a good time last night.
Had a ribeye steak and baked sweet potato.
I made an interesting desert for when we got home. I did not drizzle the chocolate.
Tonight is chili.
This is the dessert I mad for last night. I am going to write it as I made it changes and all. It was from Good Housekeeping. (boy has that magazine changed!)
Lemon Icebox Cake.
2 1/4 Cups Greek Style yogurt. I used 0 fat.
1 Tb lemon juice
zest of 1 lemon
1 tsp lemon extract
1 Tb sugar or to taste.
6 graham crackers. ( mine took 1 full, 1 half and 3 of the small pieces)
In a bowl combine yogurt, half the zest, extract, lemon juice, sugar. Stir to combine.
Line a loaf pan with plastic wrap allowing enough to hang over the sides.
Place graham crackers on the bottom of the pan.
Place some of the yogurt on top of the crackers and spread to cover.
Layer the rest I think I used more crackers and ended with crackers on top.
Top with the rest of the zest.
Bring the plastic wrap over the top and refrigerate for at least 3 hours.
