We have a meeting this evening, so we'll be having an early dinner.  I'm thinking homemade tomato soup and grilled cheese sandwiches - a quick, but satisfying meal.

  creamy potatosoup w/bacon&  cheddar chese
 scrambled eggs w/ minced onion, spiced ham cottage cheese
 buttered crust French read, dunked in the soup
 brownies &  hot tea.

Today is one of the days that I will try to get my husband to get on the bus and go out to lunch with a small group from the facility where he goes for his Day Stay.  They are going to a Chinese restaurant and I would like to go to the restaurant as well so I will go with them.  That way I get to  go out for lunch, I will have a bit of help if we need it. The restaurant is a buffet and if I try to take him to a buffet by myself he would not stay in his chair and would try to follow me so I have given up on buffets unless I have someone that can sit with him while I get food for either of us. Diet wise I should give up on buffets anyway!
 So dinner will be left over chicken rice soup.

Nikki - I hope all went well with the trip to the buffet for you and your husband, and the rest of the group.  Where we used to live there was a great Chinese buffet, but I haven't found one here that compares.  That is probably for the best because it is so easy to eat too much - ha!

Meatloaf, roasted egg plant and toss salad.  Hope to finish off the cookies today to get them"out of sight"!

Cheri, the lunch went well.  He enjoyed it and a few of the women that were on the little outing did mention that he sure can put away his food! (something that I have to keep a close eye on now that he is "pocketing food")

The Chinese buffet we went to in pretty good but not my favorite there is another that is about 15 miles away that is amazing and I would love to get there again but I would have to get a few people to come with me so someone could stay with him.  But this buffet has everything you can imagine and then some.  Several cooking stations and open kitchens. They have sushi, dim sum, flat grill cooking and more. Oh well better that I can't get there easily!

Tonight I think I will make a Ratatoullie with some eggplant, peppers and zucchini that I have in the refrigerator I will have to go get tomatoes. I have some wonderful rosemary and olive oil bread that I pulled from the freezer. And as Bakery 1 says I have some oat bar cookies that will be finished off just to get them out of sight.

I noticed that two of you listed egg plant in your meals.  I have not had egg plant since I was a child and I did not like it in the least, but had to stay at the table until I had at least three bites - pure torture for a young child!  I am beginning to think that I should give it a try again, but not sure how to prepare it.  Maybe roasted with something else tasty along with it?

It's 5 AM and I'm up cooking spaghetti -- I have to have two ready-to-go crock pots full to take to church - and I have to be there early to help get things set up.   We're having the Wednesday night bus kids at church this morning - and hopefully their parents.   After church we'll serve lunch and then turn the kids loose for a fun and wild time. 
Then the kids will go back on the bus to be taken home and some of us will remain behind to clean, clean, clean.  Then we'll have the usual evening service (hopefully earlier than usual!) so my dinner will be left over spaghetti.

I made that Dorito chicken casserole yesterday    so i'll have that again
although it was a disappointment       and hard for me to make       (thick contents to stir)
I used  cheddar/jack cheese mixed            and the top layer of crushed chips  and cheese     turned into an almost inedible crust
