In Response to Re: WHAT'S FOR DINNER TONIGHT? : Nikki they are 2 different dishes. The Serbian spinach is frozen spinach, thawed, cottage cheese, eggs and cheddar shreds all mixed together and baked. I didn't have cottage cheese so combined ingredients from another spinach casserole using sour cream and some dry onios soup mix (I always add onion to the serbian also). It is one of those recipes that doesn't have to be exact. The barley pilaf recipe I'll share although I did take a few liberties with that also. It called for quick cooking barley which I don't buy. I get my barley at the Natural Grocery and it takes nearly 30 minutes to cook. I cooked it first and then added the other stuff. Barley Pilaf with Almonds and Raisins 2 t olive oil, 1/2 c. chopped onion cooked 5 minutes 2 c. chicken broth, add and bring to boil 1 c. quick barley added 3 T sliced almonds, toasted ( I used more) 3 T golden raisins ( I used lots more) 2 T parsley minced 1/8 t. pepper After barley is done, add the raisins, almonds, parsley and pepper. I think the original recipe added salt, but I didn't write it down as I don't use much salt. Even using low sodium borth it was salty enough.

I will make the pilaf this weekend. Sounds like it would be good hot or cold.
The spinach dish sounds real good as well. So many thing that could be added.
