We're going to have homemade tomato soup along with grilled cheese sandwiches (we picked up some wonderful cheeses for the holidays with the plan that we would some of them in the sandwiches).  We have a little bit of fresh pineapple left from yesterday, along with some wonderful grapes, blackberries and strawberries - so that will be our dessert instead of cookies.

Last night, on my way home from church, I went by the store and bought some beautiful pork chops.   Tonight is going to be that wonderful recipe of pork slices cooked in apricot preserves plus salsa.

Tonight we're having chicken and dumplings.  I stewed the chicken earlier today and now it's chilling so that it's easier to take the meat off of the bones.  This was one of my favorite meals that my Mom made when I was growing up, so when I'm missing her this seems to comfort me.

A friend stopped by yesterday with her kids and she brought some soup.  We had a nice dinner and I have leftover soul
Curried lentil with garbanzo beans. Some bread from the Christmas dinner and I will be happy having that soup again.
I have leftover Lasagna that will be dinner tomorrow.  And a bit of lasagna for the freezer....unless I have lasagna 2 nights in a row and I could do that just as easily.

We're having clam chowder along with tuna melts - one of my favorite Friday dinners/suppers. It's quick and easy to make and is "comfort food" to us.

Shooting for split pea and ham soup, since the family didn't eat much of the ham while they were here visiting.  I had too many other things to eat plus we did a lot of sight seeing.  Guess I "over-planned" meals but that's better than not knowing what to fix when there is a hungry crowd, lol.

I picked up my favorite salami yesterday so tonight for me will be a salami and cheese sandwich. It sounds simple but it is an art to putting it together.  Brings back a lot of memories from when my Dad would make them once in a while for Saturday dinner.  Not often so I always thought of them as a real treat.  To this day I have no idea where he got the salami or the cheese.  I know he did not get either from the grocery store.  As a matter of fact he always came home with the roasted red peppers and the French Bread as well.

Nixing the split pea soup for tonight's dinner - will use it for tomorrow's dinner and having left over pork chops.  Need to get them used up.  Sure glad they only need a little heat up and a few veggies - dinner will be simple.  After the five visitors (our kids and grandkids) left after a week of wonderful times together, I'm ready to do little of anything!!!!

I'm not sure what we'll have for dinner tonight.  We have a busy day planned later and not much time for cooking.  Maybe I'll be able to talk my husband in to picking up a pizza on our way home, or even better eating at our favorite pizzeria.  That way they get all of the mess and we get to come home to no dishes - sounds good to me!

Every Saturday morning I go to clean church.   This morning the streets were too slick for me so I just sat and waited.   Now I can head out confident that the church parking lot will be OK for me to carry the vac and cleaning things.
So - dinner will be late and simple.  Maybe a ham sandwich!

We're having quite a cold snap here, so I'm making meatloaf along with baked potatoes tonight for dinner.  I figure having the oven on will add a little extra heat to the house, and this is a pretty hearty meal so we'll feel warmer having our stomachs full and satisfied.  I think I'll probably bake a couple of loaves of bread before that, it never hurts to have homemade bread!

For lunch I had a giant salad with chicken, grapes, almonds, fancy lettuce, tomatoes, everything. so dinner will not be a problem .... I don't think I'll be very hungry.
I love salads but, gee, it's not easy to have a big assortment of fresh things all at once.  I wish fresh things came in cans.
