Today it's turkey, stuffing, gravy (oh, I will have the best gravy ever made ) mashed potatoes, green beans, corn, jello-carrot-pineapple salad and, of course, cole slaw.

"Prime" Rib Roast, Red cabbage, "funeral potatoes", Pineapple casserole, Chocolate Truffle Pie and Cranberry Streusel Pie. My daughter is bringing the potatoes and the pineapple casserole and possibly a pumpkin torte.
We will be STUFFED.
But happy with family around us.
I am trying a "new' way to do the prime rib. You put it in the oven for 1 hour. Then you turn the oven off for 2 hours. After 2 hours you turn the oven back on and roast for an additional 40 minutes for medium rare.
If anyone has done this let me know how it turned out. I still have time to cook it in the "traditional" way.

I haven't done Prime rib like that.I have done eye of round roast kinda like that : 2-3# eye of round roast seasoned to your liking,pre heat oven to 500*place the roast in the oven and turn the oven down to 475* roast meat 7 min per pound then turn off the oven for 2 1/2 hr.do not open the door, then turn oven on to 325 and heat for 20 mins.take roast out of the oven and cover with foil and let rest for about 15 mins.Slice thin before serving.DO NOT PUT A COVER ON THE MEAT WHEN ROASTING<THIS IS A DRY OVEN ROAST!I roast mine on a cookie sheet the kind with the sides and up on a roasting rack if you don't have one use a cooling rack.This is very juicey and tender.Med.rare to rare.

It's the day after Christmas. We're going out to dinner with our kids. We had wonderful at home dinners Christmas eve and on Christmas day' After today it will be left overs.

Gee whizz,BARBARA,B Your traditional Christmas Eve menu; makes me drool....
If we lived closer;you'd have a cple of extra folks joining you;I'd even bring my "traditional" family cheescake ( for dessert)How do you prepare your dungeoness( sp) crab??? Don't worry about having enough; we don't eat much & will gladly
" settle for [ a small taste] some salad & sour dough bread. Sure miss it since we left the BAY AREA (in 1983)

It is a tradition in our family to have Dungeoness (SP?) Crab for Christmas Eve. We add fresh Sourdough bread and a good green salad. Dessert is some of the many cookies I have baked for the season. We usually add a nice glass of Chardonnay wine for the occasion. Yes, we live in the San Francisco Bay Area!

Left over Prime rib with carmelized onions,served over a large baked potatoe,salad and home grown sweet corn that I froze earlier this year.Heavenly pie for desert.

The Prime Rib Roast was great. Rare just how I like it. Tossed my husbands into the microwave for a moment since he likes his "well done". (never understood the term "Well Done" when it is anything but done well!)
Funeral Potatoes, that is the Hash brown potato casserole. She makes hers with the hashbrowns that has the onion and peppers in the mixture. Has cheese and a topping of crushed crackers. I will get the recipe and post it later.
The pineapple casserole is wonderful as well. That is chunk pineapple, grated cheddar cheese mixed with a bit of flour and butter. Topping of crushed crackers, (the round buttery type). Very good with ham but I would eat it anytime. Have it twice a year so it's not that bad....

Ann, I know I'm late with this, as I just saw your reply today. We buy our crabs from our friendly Lunardi's supermarket. They cook, clean and crack them for us. We do order them several days in advance. I just serve them cold with a nice garlic and basil in olive oil dipping sauce. They were really good and I had enough left over to make a crab salad. Of course I had to pry the meat out of the shells. We have lived in the Bay Area for 31 years, but before that we lived in Southern California for about 10 years. My Husband and I are both UC Berkeley grads.....that is where we met. I'm sure you are now used to completely different weather than we get in California. My grandson will be attending Rensselea Poly Tech in upstate New York in the fall, so he is going to get a full dose of your type of weather!!!
