In Response to Re: WHAT'S FOR DINNER TONIGHT? : Lisa, I can't help you with the needed chicken, but a good substitute for real buttermilk is to add either lemon juice or vinegar to milk and allow it to sit a few minutes. It becomes thick like buttermilk and makes a great substitute. Can't quite remember the amount but something like a Tbs of lemon or vinegar to a cup of milk. Maybe some of our good cooks could give the exact amounts. I usually just experiment until it looks right to me.

Here are 3 subs for buttermilk
Place 1 Tbsp white vinegar OR lemon juice in a measuring cup & add milk to make 1 cup. Let stand 5 to 10 minutes then use.
1 C buttermilk = 1/4 C milk mixed with 3/4 C yogurt
1 C buttermilk = 1C milk plus 1&3/4 teaspoons of cream of tartar.
