Tonight it will be Kansas City Steaks, baked in the oven (too cold to grill) with Cream of Mushroom Soup and Onion Soup dry mix, mashed potatoes, vegetable, and salad.  I might even have enough time for brownies!

I am doing a pot roast.  The "recipe" is a bit unusual but just dug up the Horseradish from the garden so I thought I would make this tonight for tomorrow, Pot roasts are so much better the next day.
Pot Roast
Blade roast or other cheap cut
Carrots, I use about a pound or more since I LOVE carrots
Celery, a few stalks
2 Onions  or so medium sized ones
2 Potatoes
1 Can whole berry cranberry sauce
1/2 to 1 Cup horseradish
1 can or 2 cups Beef stock or broth, low sodium
salt and pepper
Cut beef into 3 or 4 good sized pieces. 
Cut carrots and celery into 2 - 3 inch lengths
Cut potatoes and onions into 1/4
In a pan brown beef
Place browned beef aside either in crock pot or on a plate.
Add veggies to the pan and let them pick up a bit of color. Place them aside with the beef.
Pour beef broth into pan and pick up the browned bits, add the can of cranberry sauce and allow it to melt down a bit.  Stir in horseradish. Add salt and pepper to taste.
If you are cooking the pot roast in this pan add all ingredient back in, if you are cooking in a slow cooker pour liquid over the ingredients in the cooker.
Cook on the stove top or in the oven 2 - 3 hours --Slow cooker 6-8 hours depending on setting.  If you do this in a pressure cooker do it in stages will take about 1 hour total.
I do lie the gravy served over noodles better than potatoes so sometimes I make both.  My husband is a potato guy so I don't do a lot of potatoes in this as I would rather have the noodles.

Tonight was burgers and cheese hotdogs on the grill...just too tired from
work to make a big meal!

Bake it with some cut up red potatoes and sprinkle parmesean on top, and you've got yourself one delicious dinner.

hee hee hee --- Soon I'm off to the grocery to buy stuff for my cats' dinners ..... chicken breasts I cook slowly in low-salt chicken broth and chop by hand.
If I behave very nicely and chop it correctly they will let me have enough for a hot chicken sandwich.
