Baked chicken breast and scalloped potatoes with garlic added.  I love garlic lol.

We made a pot of homemade split pea soup along with crusty bread.  Did this ever taste good after a long walk kicking the falling leaves, enjoying the beautiful day.  For dessert we had the last of my birthday brownies.

Hubby and son are having burgers and mac salad.I'm having a crab sandwich from SUBWAY and maybe mac salad if there's any room.

LOL -- I had spaghetti.  Yesterday lunch at church was spaghetti and my dinner at home was spaghetti.
I made GALLONS of that stuff and then decided I simply could not manage that giant crock pot. 
Instead I loaded my biggest (it required 1 and 1/2 pkgs of dry spaghetti and the sauce) old one and took it.
Now I have lots of sauce in the freezer.

My sister gave me a recipe for " Tuscan Bean Soup" well I mad it today and had some for lunch.  Had more for dinner and I have enough for the next several days.  Next time I will cut in half the orzo called for.  It thickens the soup a lot and I think that is why I have so much.
It is a very inexpensive soup.
Tuscan Bean Soup
2 Tb olive oil
1 large onion, minced
2 Celery stalks, diced small
1 can, 28 ounces diced tomatoes
1 tsp fresh sage
1/4 tsp crushed red pepper flakes
6 cups chicken broth
1 Cup orzo
1 can, 15 ounces red kidney beans, drained and rinsed
1 can, 15 ounces cannellini beans, drained and rinsed
salt and pepper to taste
Heat oil in a pan, add onion and celery and cook until soft, 7 to 10 minutes.
Add tomatoes with the liquid, sage, red pepper flakes and broth.  Bring to a simmer, skim off any foam that rises.  Add beans and orzo, stir and cook until orzo is tender about 5 minutes.
Season with salt and pepper.

When I make a soup that calls for pasta or rice I cook that separately then add it to the bowl and top with the soup.  That way I can store the rice or pasta in a separate container so the soup does not get too thick and the rice or pasta get over cooked when heating it.  I did not do that with this soup and I should have.
I also think the soup could have used a wee bit more of the red pepper flakes but I was told by a friend that it was just the right amount.  She does admit to being a wimp when it comes to spice though.

I think this would be great with chicken added but it certainly does not need it.

My husband finished off the last of the london broil with some steamed broccoli and I had chicken soup.  Yeah, more leftovers out of the fridge lol.

My son brought home chicken dinners for us tonight he was helping his brother move and wasn't sure what time he would be home and told me not to cook that he would bring dinner.It's nice to have good sons.

I had lunch (Chinese!!)  with a very nice woman from church.  I was complaining to her about all the spaghetti I have in my freezer --- she laughed and said her family would LOVE some.   So tomorrow morning I'm taking her loads of that stuff ~whew~.   I'm so grateful that I'll take some broccoli salad too.

My youngest son wanted to take us out for dinner so we went to Panda Express and it was such a nice dinner.  I had planned on making a roast for dinner, but with the beautiful weather we had today it was nice to not spend the time in the kitchen.

Tonight I made a turkey version of chili mac.  Used up the tomatoes I had cut up yesterday plus two green peppers I picked in the garden today.  I thought it was pretty salty but wouldn't you know that man got out the salt shaker lol.

Hope I can come up with an easy idea.  I'm finishing off the quilt for my oldest daughter and making cushion covers for my neighbor's wicker furniture.  Think I can squeeze in making scrambled eggs with sweet red and orange peppers with toast.  That should do it for tonight!

We had a hamburger stroganoff hotdish, a great spinach salad, green beans and then relaxed over a cup of coffee and pumpkin cookies.
