I'm making potato soup for dinner tonight.  We have left over salad to go with it and I think we'll have some fresh fruit for dessert.  It's still cool out so a nice walk after dinner is probably in the cards.  Sounds like a pretty perfect evening.

Birthday dinner tonight. (my hubby...) I am having my sister and brother in law over.
Chicken, marinated in garlic, rosemary and lemon zest and juice. 
Roasted vegetables, zucchini, onions, eggplant and a few potatoes. 
Couscous, my sister has never had it and it goes well with the meal soaking up all the juices.( But in case she and B-I-L do not like it that is why I am doing the potatoes.)
For dessert...Key Lime Pie and I made my first Italian Meringue for the top.  It looks good will see how it turns out.  I just hope it does not weep like a regular meringue weeps.

Nikki - Your menu sounds delicious!  Happy Birthday to your husband.  I have read that Italian Meringue is not as likely to weep as the type of meringue most of us are used to making - good luck on that.

Oh my...the Old Chicago that we used to go to in Elk Grove Illinois closed and I think the other one that is "near" us is in Rockford.  we have not been there in a very long time.  I guess because there are a few really good places closer for pizza.  But their Italian Nachos are very good.  I think they had a pepperoni bread that was really good.  I could make a meal out of their appetizers.

the birthday dinner was outstanding as a matter of fact is was so good we just had the leftovers. 
The house still reeks of garlic.  I had roasted 3 heads of garlic for the chicken so the aroma lingers from that then cooking the chicken with the garlic just added to it. 

The Key Lime Pie was wonderful, my sister normally does not eat sweets finished a pretty good size slice. 
The Italian Meringue did not weep but I did not seal it to the crust so it did slide a bit.  But I found the taste and texture much better than a regular meringue.  I will be doing that again. (and as long as I accomplished that I just may have to try making Italian Butter Cream Frosting.  So so much better than "our" typical butter cream frosting. 

Just took a pork shoulder out of the freezer getting ready to make pulled pork on Sunday.  Great way to have leftovers for a few days and I always put a good portion in the freezer so I can make Pork Fried Rice.


Oh, thank you all for the good wishes.  70 years old. Amazing he has recovered from the broken hip and dealing with the Alzheimer's is sometimes a challenge but all in all he is doing pretty good.  Good days and some not so good.  But he constantly amazes me. I am glad that he is doing as well as he is. (I don't know but that may be the Pollyanna in me or a bit of denial)

Tonight I had brown and wild rice with craisins and walnuts added along with a side of garden tomatoes.  The three tomato plants I have are so loaded that I may get sick of eating so many tomatoes before the growing season is finished lol.
