Tonight will be leftovers. 
I/we had company yesterday for a very late lunch or a very early dinner...we called it "Linner" . 
I made a BBQ pulled pork. Tossed it in the oven around 5am and it was ready by 2pm. 
I made 2 salads, a Potato salad with Blue cheese, Vidalia onions and bacon. The other salad was Watermelon, onion (should have been green onions but I used a bit of Vidalia) and basil with fresh mozzarella cheese and a light oil and vinegar dressing. Everything was great.  OH, Chocolate Chip Cookies for dessert.  
Some of the BBQ pork will be tossed into the freezer as I plan on making Pork Fried Rice later.

Nikki -- I sure would appreciate it if you'd tell me in great detail how you made the pulled pork .... starting with what cut of pork.  Please.
At the last social function at church we had pulled pork BBQ sandwiches made by a fine man .... BUT he doesn't share his recipe for BBQ sauce.  I snatched at much left over as I could but it didn't last for one day.

Nikki - Your watermelon salad sounds delicious.  Alas, I would be the only one in my family who would eat it, but I am thinking of making it for our 4th of July get together with friends.  That way I'll have more people to share it with.

The "Pulled Pork" is what I call stupid simple. 

1 pork shoulder.  The one with the bone in it. 
Rub with your favorite dry rub..this is my standby.
Make a lot it keeps very well
1/3 Cup paprika
1/4 Cup sugar, white or brown
3 Tb ground black pepper
1 Tb dry mustard
2 tsp cayenne pepper
adjust as you like but this will NOT be overly spicy. 
Rub the pork shoulder with this rub and wrap and refrigerate over night. 
If you have a grill great, I don't.
Place the pork in a pan.
Set oven to 250 degrees
Toss the pork, unwrapped in the oven for about 8 to 10 hours.  Low and slow so if you are using a grill same idea.
Take the pork out of the oven wiggle the bone out.  Place the pork on a cutting board or large bowl and with 2 forks break it apart. 
Heat some BBQ sauce and serve the sauce with the pork but it is great without sauce. 

The watermelon salad was a surprise to me as I have never been fond of basil but I tried it at a grocery store and I was hooked. 

Watermelon, Mozzarella salad
2 Cups watermelon seeded and chopped
2 Cups fresh mozzarella diced small, about the same size as the watermelon pieces. 
2 Cups fresh basil chopped. 
1/3 Cup olive oil
2 Tb vinegar, balsamic works well.  You can use white vinegar as well or a wine vinegar. 
Mix all together and serve right away. 

If you let the salad sit for a while the basil will get dark but it still tastes wonderful.

Nancy, you can make the rub sweeter by adding a bit more sugar.  The risk of the rub burning is pretty low as the oven temperature is low.  The pan will get some burned drippings but it soaks off pretty nicely.
 If you have a favorite mixture that you like use that. 
The top and sides of this get very dark but it does not taste like it has been burned.  I do a few nibbles of the darker crusty bits then I just mix the darker portions into the rest of the pork and that gives you a nice tasty bit mixed in with the soft tender pork.  (Sort of like getting a piece of the turkey skin before you carve the turkey for everyone else.) 
I have also served these sandwiches with coleslaw on top of them.  The slight vinegar of the slaw dressing gives a nice tang. There are BBQ sauces on the market and lots of recipes on line for what I think is more the Carolina sauce that is more vinegary than what we use.  Seems each part of the country has "their" sauce.  I sure would love to make it my mission sometime to go around trying all of them.

we use the part they call porkbutt, because they put on sale more often and both are very large pieces of meat, so you probably want to wait for a sale  the one I have in my freezer was just .88 a lb and it was around 8-10 lbs
but it can be frozen like nikki says
I freeze mine in a small portions  enough for one sandwich w/ sauce

today's lunch will be b-k rib
and supper i'm fixing my g.s. a pepperoni  French bread pizza

Nikki - Thank you for both of the recipes.  I'm definitely going to make the watermelon for our 4th of July get-together.  I usually put my pork in my crock pot and let it cook overnight if I need it earlier in the day the next day.  I am going to give your rub recipe a try, it is similar to one that we made years ago.  My husband prefers a dry rub and I am sure he will enjoy this one.

When we got home, hubby had a juicy orange, an apple @ home and then a chunk of Bundt cake
We shared parts of our lunches so we both had some of everything 
've had nothing; waiting till DINNER time

me: oatmeal; all I have an appetite for

The last (thank goodness lol) of the tortellini and sauce for dinner tonight.  Won't be making that again any time soon.  Starting to really hate leftovers!
