What's "Spanakopita"  ?

A wonderful, tasty Greek dish. Also known as Spinach Pie. 
Filling is a mixture of Spinach, I use frozen, thawed, drained and wrung out well then chopped. I mix in Feta cheese, lemon juice, lemon zest and eggs. 
Filo dough, slather with a bit of butter or oil between the layers. 
I start with about 3 or 4.
Then a some of the filling.  Roll it up sort of like a Burrito. 
Place seam side down on a baking sheet I line it with parchment.
Bake until golden brown, about 30 minutes or so. 

You can also make them as little appetizers cut the Filo in strips then place a tablespoon or so in one corner then fold up in a triangle.  (Way too much work as far as I am concerned. 

Or make life real easy and layer the Filo in a jelly roll pan, dump all the filing on and spread it around.  Top with more Filo then cut into serving sizes then bake. 

Any way you do it it is wonderful. 

I am also not 100% sure of the spelling, spell check does not recognize it.

the Chinese buffet where I go always have that on the menu
they make a square by folding all 4 corners in to meet in the center about 2 1/2 in sq
and it is really good

Anyone that can make Davinity can thaw a Filo and mix together a filling!
The spinach filling is so good I could just bake that in a casserole and eat it that way.  I bet it would even be good as a hot dip with pita chips!

My dinner was common as they come -- and absolutely GREAT.   I grilled two fine steaks - one tonight with the usual stuff - one tomorrow in a couple broiled sandwiches.    aaaahhhhhh

All I did the first time I made Spanakopita was follow directions.......
Ya just gotta take the plunge.....
Sort of a Leap of Faith that you can do it.
And with the spinach filling even a "failure" would taste great.

My husband told me that he wants to cook dinner tonight, so who am I to deny him?  Ha!  I'm not sure what he's making but I am sure that it will be delicious - he's a great cook.  I think we make the perfect couple in the kitchen, he loves to cook and I love to bake.

my g.s. came by to pick up a subway card (I get them at Kroger when they have 4X on gas pts)
so he could take his brother to eat and I had them bring me a 6-in. ham and turkey
reminder  they are on 4X again this week and I need to get some

he and I have to take our dogs to vet tomorrow for yearly check-up and shots and heartworm pills
so we'll probably bring something home for lunch

 hubby finally tried it & admitted he likes it& even  requests it
Surprised
 chicken  veggies w/ all the same sdes to complete temeals;Oh yes add eggrolls to the meals

 BIG Asian salads topped w/ sliced chicken frittersand sesamre ginger dressing, too
Today's roni pizza was a nice switch( Italian food instead f Asian!!!!!!!!!!!!!!

I made Spaghetti using whole wheat spaghetti noodles, ground beef, Prego Spaghettie sauce, and to the meat I added fresh minced garlic, mushrooms, and onions. It was delicious!! Eating the leftovers for lunch tomorrow! :)

Last night I BBQ'd  some country spare ribs .....not bad but not as good as regular pork spare ribs.   Tonight I might have the left-overs and I might BBQ some pork steaks.  Depends on time and energy.
