This has been a very rainy day, so I figured it was a good day to use the crock pot! I threw in some potatoes, onion, a little garlic, one carrot ( just for flavor as my husband does not like cooked carrots). Then I browned some beef stew meat and added a small carton of mushrooms to the mix. Topped it off with 1 cup of water, 1 cup of red wine, salt, pepper, dried thyme, a pinch of cloves, and some "W" sauce. Later just before eating I will thicken the " gravy" and throw in some frozen peas. There is a lot there, so it will last for a couple of meals.

And I could do an entire 2 or 3 pounds of carrots in a meal like that and I would be very happy just eating the carrots, a little gravy and a bit of horseradish to add some spice. I'd never know the meat is not on the plate. I love carrots.
