Can't vouch for this recipe, but it sounded good so I'm making Apricot Honey Chicken.

4 boneless skinless  1/2 chicken breasts (2 breasts halved)
1 Tbs oil
3 Tbs apricot preserves
2 Tbs orange juice
4 Tbs honey

Cook chicken in oil in skillet over medium heat for 7-9 minutes on each side or until 170 degrees.
Combine preserves, orange juice and hone and pour over chicken.  Cooke 2 minutes or until heated through.  Serves 4.

Bakery that sounds lovely.  A nice change from baked or BBQ chicken.  I bet it would taste great with rice.

Digging through the freezer I pulled out a tray of frozen lasagna that I put in there last time I made lasagna.  I figured that would taste great.

We have been watching Food Network today & there have been so many fried chicken receipes!  I don't have any buttermilk or chicken to fry SOOOOOO I think I shall run to town & get the fixins for tomorrow!!!

We went out to dinner with our daughter.  We tried a new place and it was pretty good.  Our appetizer was an artichoke dip, and it was the best I've ever had.  I could have made a meal of just the dip!

We liked the honey apricot chicken.  I didn't have OJ in the house but I did have apricot nectar so I substituted that in place of the OJ.  This is a keeper for us.

Lisa, I can't help you with the needed chicken, but a good substitute for real buttermilk is to add either lemon juice or vinegar to milk and allow it to sit a few minutes.  It becomes thick like buttermilk and makes a great substitute.  Can't quite remember the amount but something like a Tbs of lemon or vinegar to a cup of milk.  Maybe some of our good cooks could give the exact amounts.  I usually just experiment until it looks right to me.

Since my husband and I have dental appointments this early evening, we'll probably pick up some "fast food" for dinner on the way home.  I did some baking earlier, a raspberry pie, so we'll have a homemade dessert to enjoy with our coffee later.
