Sandi, welcome to the boards.  Homemade chicken noodle soup sounds awesome.  Haven't had that in a long time.

 THURSDAY
NOON
:
 1/2 toasted whole grain bagel w/ PB
 chicken broth
 cocoa
 fresh purple plums
seedless green grapes
DINNER:
 cold noodle kugel ( pudding)  one of my Grandmother's recipes requested today by hubby... It's sweet&  loaded w/ apples& raisins, served topped w/ plain or vanilla yogurt.Today is another hot & humid day, so I  micro baked the casserole; chilled to serve cold w/ yogurt for a  sweet cool & light supper, just what we  both crave tonight. The casserole it was baked in is already  scrubbed &   put away, another  nice thing about  this dish:( no cleanup in the hottest part of the day... It's made w/ cottage cheese&  egg whites ; lots of  healthy protein w/o fat or choesterol

I saw a great chicken recipe on www.McCormick.com and I made it tonight. .... Herb chicken Skillet with Spinach and Tomatoes.   It was very good.
That's a great site ---- so many different recipes.

I made chili.  It was going to be soup but then I found some beef fajita mix in the freezer so I chopped that up.  There is a local store that sells seasoned meats for fajitas beef or chicken.  When they put it on sale I buy several pounds and portion it into 1 pound packs.  It is a mixture of meat, onions, peppers and seasonings.  It is great for chili as well as fajitas but I think I have made more chili with it than fajitas. 

Just printed out the recipe for the Ginger Orange Chicken and Coconut Rice, that will be dinner on Saturday so now I can get shopping done...and pick up the vanilla wafers.....

I did have a loaded "baked" potato last night, but since it was very close to 100 yesterday
I "baked" the potato (skin and all) in my double boiler-steamer  on top of the stove
I haven't done that in a while but it was very good

Nellie - all summer long I ":bake" my potatoes in my microwave.   Works for me.

It is so hot and humid here today so I got up early and made a tuna macaroni salad - wanted to get the boiling of the pasta and eggs done early.  We'll have that tonight and some raspberry sherbet for dessert (I could make my whole meal the sherbet - my favorite).

I also have tried doing potatoes in the microwave and have always had poor results. 
I like the skin crispy so that is one thing the microwave can not do. 
I have started them in the microwave and finished in the oven and that works with some success.

today is my b-day      I've been taken to breakfast at Whataburger
sent a plate w/ a stuffed chicken breast  and crispy potatoes for lunch
my niece just brought me a bowl of real  made totally from scratch except for vanilla wafers banana pudding (a real fav)  it's a large bowl  it will be my supper tonight
my son and d.i.l. are making a ribeye steak tomorrow
and Monday friends are treating me to nachos and margaritas at local restaurant
and when the Texans win the game mon night   papa john's is bringing me half price pizzas
and it's actually rained all day   first in 3 weeks

We wen to the lastremaing good Chinese estaurant in our city...The other one( same distance from our home ) closed down again...Theykeep closing & reopening; always moderately  busy when open.The once had a buffet lunch w/takeout tha was great forus.Hubby  willfill up one take outbox w/ appetizers&  one veggiedish; bring it home& I'dserve it w/ ny  gingery chicken broth, Japanese cuke salad&  dips fordunking the asst apppetizers.
The guy who has been our waiter forover 20 years, took care ofus today.He rembered the beverages we both like and it's been over 4 years since we ate there.
he: hot & sour soup
 fried wontonskins& duk sauce
 housespecial bean curd: pork, chicken, huge (8-10 ct) shrimp  chunks of fried tofu ; red bell pepperstrips black mushroom chunks,  onons& water chestnuts  in a delightful savory sauce
w/fried rice
 me: egwonton soup; house special bean curd w/brown rice
 hot tea; fresh juicy orange &  fortune cookie
When they first opened over 20 years ago;  on our 2nd visit TOMMY  was ourwaiter I ordered the specialbean curd &  requested red bel peppers&  black mushroom; at thattime the chef used common mushrooms&  green bellpepperstrips.Tommy said they had noblack mushrooms that day..On ournext visitTommytoldme that they have blacxk mushrooms that day & I ordered the bean curd "my way"

every  time we go here, we both order  the special bean curd dish& it is always made now w/ red bell eppers &  black mushrooms
Tommy used to rememberhat  it was my suggestion to fancy it up w/ red pppers&  black mushrooms.It is the most expensive choice for lunch &  is ver y popular Every time a waiter goes by w/ an orer of the specialbean curd  Ifeel important forhaving encouraged the chef to  make it asI thought of doing it  Hubby says that we should get acFREE or  discounted meal  since y suggestion brought about their most popular  luncheon dish

We each brought home half of our bean curd dish for  tomorrow's lunch @home.I brought home half of my brown rice.
DINNER;
I had no appetite for a meal tonight&  had a bowl of oatmeal so don't wake up @ 2AM w/ the hungries

I could only eat half of the pudding------------guess what's for breakfast
my sister and some of her grands just came over with a quad chocolate cake and I had vanilla ice cream
but I made them take the rest of the cake home it was very rich and just a couple pieces left and I have pudding for breakfast
