In Response to Re: WHAT'S FOR DINNER TONIGHT? : Lisa, I can't help you with the needed chicken, but a good substitute for real buttermilk is to add either lemon juice or vinegar to milk and allow it to sit a few minutes.  It becomes thick like buttermilk and makes a great substitute.  Can't quite remember the amount but something like a Tbs of lemon or vinegar to a cup of milk.  Maybe some of our good cooks could give the exact amounts.  I usually just experiment until it looks right to me.

Here are 3 subs for buttermilk

Place 1 Tbsp white vinegar OR lemon juice in a measuring cup & add milk to make 1 cup. Let stand 5 to 10 minutes then use.
1 C buttermilk = 1/4 C milk mixed with 3/4 C yogurt
 1 C buttermilk    = 1C milk plus 1&3/4 teaspoons of cream of tartar.

Mon. I had baked rigatoni (from Sunday) hubby had reubens (from Friday's corned beef), chips, tomato slices & pickles.

i'm having vegetable beef soup and cornbread
finally found some bones at grocery yesterday
i'll put some soup starters also for my freezer

Porcupine meat balls (Really not porcupine) lol! Ground turkey with rice cooked in a tomato sauce.salad and rolls with butter.

Fall is in the air so I think we'll have beef stew tonight.  Amazing how much I'm enjoying getting back into cooking and baking now that the mornings are so much cooler.

BUTTERMILK REPLACEMENT:
  1TBS vinegar( cider or white)  to onecup of milk(I use  evaporated milk)  stirbriefly &  allow to thicken (  1-2 minutes, good or salad dresings, marinadefor my  oven"fried' chicken; pancakes, biscuits   or any otherr use for buttermilk& it'salways on hand, unlike fresh buttermilk

My husband made a pot of vegetable beef soup for dinner tonight and it smells wonderful!  I made a loaf of wheat bread earlier today to go with it.

 WEDNESDAY;
NOON:  In this morning's Email, I received  a BOGO oupon for our fave steakhouse ( lunch combos).Since iti s grocery shoppingday we  treate d ourselves to lunch out

He ; "loaded"baked potato soup( bacon& cheese) 
& 1/2 BBQbeef sandwich.
I had FULLsize Caesar salad  and 1/2 BBQ beef sandwich
 BOTH came w/ onion "straws"and "house homemade"potato chips, realy terrific stuff & a treat  each tme it arrives on our table .Our fresh hot  crusty  honey-wheat  bread w/ butter arrived promptly w/o us sking.
We both had lemonade.
Our waitress   was less than terrific, but she "tried" yet "forgot "to  credit our BOGO coupon but  did so once  reminded. She later apologized fr her  lapse. The meal was so good, despite her  less than stellar  performancethat hubby tipped er  25% of discounted  total.; 20% of regular price. W/o thetip itcosts about  the same as our usual Wendy's lunch( chili opped baked  potato for hubby&  a full size   apple -cranberry pecan grilled hicken salad or me w/  a shared small frosty .While I  like Wendy's, it was nice o eat in a"real" restaurant for aboutthe same cost& getting  to use real cloth  napkins Wink

GRANA here;; The ( grocery store) meat dept had a few beef soup bones f or about $8each pkg today, that makes homemade beef soup more expensive than canned lower sodium/ healthier beef-vegetable soup; on sale; using coupons . While homemade tastes better, I chose to be lazy& count my penies , conserving my time  for other activities

Chinese take out.Dinner for three,won ton soup,egg rolls,pork ribs and fried rice.The guys are having,sweet and sour pork,Chicken and brocoli.I'm having chicken chow mein.

my g.s. other g.m. and i had gone grocery shopping to pick up pork loins and baby back ribs and by walmart to exchange a halter i had bought (clearance) for her small dog
i texted the g.s. at school and invited him to join us at place of his choosing for and he chose the local mexican place               i had a beef fajita quesadilla              it was good

We are on a road trip so stopped at a restaurant that looked appealing and we chose quite well.  I had orange roughy (my favorite fish) and my husband had salmon.  The food was delicious and now we're ready for a nice, relaxing evening.
