i found a pkg of pork cutlets in the quick-sale yesterday
i breaded and fried them and several are getting quick frozen for another day

Since it's going to be bitterly cold here tonight we will be staying home and having a roast beef dinner and watching the New Years' festivities on television. Usually we go out to dinner, but I don't want to freeze.

I have a pot of chili on. My daughter, son in law and grandkids are going to come over and I said I would make dinner. I made a cheesecake yesterday for dessert. So very easy the bit that I baked to taste test it was good, I don't think it was/is chocolaty enough for me though but I am sure everyone else will like it.
I had the cream cheese in the refrigerator and I figured I would use it so it would not be hanging on at the start of the new year. Any left over cheesecake I can freeze.

Speaking of freezing .......... does anyone know if I can freeze left-over coconut milk?

This afternoon I was making the vanilla macadamia fudge and assembling the stuff for tiger milk and dark chocolate/smoked almond bark ....
Then I thought aboput my cheap dinner!!!

Since we went out for lunch, dinner will be meatballs in chili sauce, shrimp with cocktail sauce, cheese and crackers and, at midnight, some herring in wine sauce for good luck(my better half's danish family tradition).

i'm having oven fried chicken breasts (bone-in)
roasted new potatoes, fried cabbage, peas and cornbread
i also have some chicken breasts to stew and put up for more meals
heb had them for 1. this wk but put them in a larger pkg than normal (6/7 instead of 3)

i just chop the cabbage in large sections about size of lg egg  and onions large chop usually i use 1 onion for each head cabbage and about 3 or 4 slices of bacon (for each cabbage)
chop bacon   and start it in skillet (large) when bacon is about half done and some grease in pot i start adding the cabbage and onions and stir add salt pepper and a little sugar
when pan is full i put the lid on and let simmer for a few minutes until the volume goes down then stir agaim add more cabbage and onions   seasonings   and cover and repeat until everything is in the skillet

i always liked it sort of al dente     but for a long time now because of one b.i.l. that won't eat antything not over-done         i've usually cooked it all the way down to kind of like squash
today      i'm only pleasing myself so i probably just stop at al dente   because i'm not expecting company

That cabbage sounds wonderful. I will have to pick some up next time I go shopping. Extra for the sauerkraut I intend on making. Or trying to make.....

Tonight it is a toss up between a bit of chili or Turkey/chicken noodle soup.

And my daughter brought down another turkey carcass so I will have to break that down and put it in the freezer so I think a turkey chili or my stuffed pasta. OHHH......maybe do a lasagna with the ingredients for the stuffed pasta. I may have to think about this. There is only so much soup a person can eat.

My oven is cooking Baby Back Ribs with Sauerkraut and Cabbage. Get the ribs going with just a little salt, pepper, and a dash of vinegar to break down the meat. Later, put in the sauerkraut first, and the chopped cabbage on top. Little more pepper & LITTLE more salt, and last; but not least, a good sprinkling of brown sugar. Let them bake until the meat falls off the bone. Wow!! My mouth is watering already! Serve it up with some smashed potatoes and a veggie (if you wish)....a meal for a King!!

OMG   that was soooooooooooo good

but i did ask my cleaning lady down to eat w/ me since her kids were not home
and she   of course    cleaned up the pots and put leftovers in fridge    cleaned the stove and swept the floor       we gathered the garbage and on her way out she pulled the can to the streetsince they come tomorrow

after she left i cleaned the meat off the other breasts that i stewed    and   got all that in the freezer   and washed that pot
