I found a piece of fish in the freezer last night and cooked that up with a butternut squash for a side dish. That sounds all good and healthy but then I had to use up the strawberries before they went bad. Couldn 't find any yogurt in the fridge but had just bought some really good vanilla bean ice cream. Mixed strawberries, 2% milk and ice cream...

Well if you are going to splurge with anything it is best to splurge with ice cream! Just think of all the calcium that you got and the antioxydents from the strawberries.  The only thing that would have made it a bit healthier would have been a bit of dark chocolate.

OH My Yes, dark chocolate is my favorite. That's funny because as I was putting the milk back in the fridge, I honestly thought how good it would be to add some chocolate syrup.   I probably had more strawberries in the drink than ice cream but you don't need much ice cream to make it good. And I agree with you totally about getting all the nutrition from the strawberries and ice cream. It's always more fun to look on the good side of things. Smile

I think I'll use your idea about making chili tonight. I have some hamburger that hasn't been frozen yet so... sounds good esp since we are slipping back into winter for a few days.

You must tell where you are going for your vacation?

I am going to France. The couple that I am going with have been many times and are excited to act as my tour guides. I have had this scheduled for quite a while and I figure it is a "once in a lifetime" so I gotta go!
I have very mixed feelings about it.  I hesitate to leave my husband, I know you are fairly new to the posts so long story short is he has Alzheimer's, he will be going to the same place where he has been going for Adult Day Care so they know him and he knows them but to have no visitors for almost 3 weeks I am fearful how much memory will be retained by the time I return.
But I need the break and I am sure he will be fine. At least I hope he will do well.

Sorry to hear about your husband. Most likely he will do well so I agree with your decision and hope you have a great time-how could you not-that sounds like a lot of fun. We aren't any good to anyone unless we take care of ourselves, right?

Nikki - I am glad that you are going to be able to go on your trip to France.  You definitely deserve the time to relax, but I know you will have mixed feelings.  We took care of my husband's Mom for quite a while, she also had Alzheimers, and it was a full time job.  I hope that you will be able to enjoy yourself.  I am sure there are many of us who wish you well.

Flight leaves at 5:45 on April 25th.   Ok, let me hear the jokes about April in Paris!
I have so much to do in such a short time.
Like with any vacation you plan and the time seems so far off then before you know it it is time to go and you wonder why you are not ready.
Because it is international I have to be very careful about the weight of the suitcase so packing is a challenge.
I suppose I could take an empty suitcase and wear all my clothes
Wink...as far as I know I have no leg on the journey that is on Samoa Airlines..(That is the airline that is charging passengers by their weight)Embarassed

Finally finished making the chili that I started days ago so I had some of that with a piece of french bread.  Tasted pretty good even though I was trying to eat while on the phone lol.

Have a great time on your trip Nikki.
