Roast beef w/ mash potatoes and applesauce.  Dessert was Cinn. buns with a butter icing!

Here I am up early again.I think Southwest white chili would be a good choice for tonight,so cold here.

Have no idea but was thinking about roasting a chicken. Have not had that in awhile. Everyone keep safe out there.

Pizza tonight with chips!

We are suppose to be hit with a North Eastern snow storm 6+ inches of snow starting Tuesday afternoon.  Maybe it will be time for a big ole pot of soup!

Susan - that snow storm hit here this afternoon.  It's not snowing too hard yet but it will increase tonight.  We expect to get around 4" .... lots more to the north.

Tonight I made myself fried chicken, mashed potatoes, gravy, corn and cole slaw.  What a treat!!
And I have left-overs!

Lunch will be chicken salad sandwiches,I kept some baked chicken breast from last nights dinner.Dinner will be tuna and noodle casserole and a side salad.

Tonight for me is a soup.  A dear friend gave me the most wonderful Christmas present.  Soup in a jar.
So that is what I am making.  The jar is so pretty layered with all the ingredients.  There are Garbanzo beans, lentils, Red Kidney Beans, White Navy Beans,Dried onions, spices to that you add broth, canned tomatoes and cook for 2 hours on the stove or slow cooker for 6 to 8 hours.  I will have to get the recipe from her as it looks and smells so good.

I love a good gumbo.  It will warm you from the top of your head to the tips of your toes. I always add some diced jalapeno pepper and cheddar cheese to my cornbread.
Should I ask if it is an okra or file gumbo?

I think I will grill on my grill pan a couple of what we call "skinny steaks"   ( New York or rib eye steaks that are thin cut)  Portion control!!!  On the side will be asparagus and roasted Yukon Gold potatoes that are quartered and tossed in olive oil, salt and pepper, then roasted until brown.  That will be fast and keep my husband happy as he has a meeting  tonight for a volunteer group..

Hi Nikki,I made up several quart jars with soup,beer bread and chili mix for gifts for the family and it was a big hit.I used soup base in mine and all that was needed were the canned tomatoes,frozen vegetables or meat if desired.I think these soup mixes would be great made ahead of time and just stored in baggies,for a night when you don't feel like cooking much or to take on camping trips.

lol lol lol -- so I ran to fix my dinner of mostly leftovers.  I was gobbling mashed potatoes, really good gravy, corn, cole slaw and bread.  I felt like something was missing but finished before I remembered the left over chicken in the 'fridge.
