Can't vouch for this recipe, but it sounded good so I'm making Apricot Honey Chicken.
4 boneless skinless 1/2 chicken breasts (2 breasts halved)
1 Tbs oil
3 Tbs apricot preserves
2 Tbs orange juice
4 Tbs honey
Cook chicken in oil in skillet over medium heat for 7-9 minutes on each side or until 170 degrees.
Combine preserves, orange juice and hone and pour over chicken. Cooke 2 minutes or until heated through. Serves 4.
