Nikki - that sounds so very pretty! I wish we could see a photo. I've been boiling all those turkey wings and turkey legs trying to get great broth. The broth is fantastic and, of all things, the meat is good too. I've never eaten "dark" meat - thought it wasn't good. Well, it sure makes a good sandwich.

The dark meat is moist and makes a tasty sandwich. I also put a swipe of cranberry relish or sauce on the sandwich.
I use some of the thigh and all of the legs and wings for soup. I also toss the back, well the whole carcass in my pressure cooker to start the soup. Any meat that comes off the carcass goes into the soup. I toss out bare, bleached bones. A buzzard would have a hard time finding meat when I'm done.
