Apricot Salsa Pork done on top of the stove.  I think I posted this recipe some time ago, but if anyone wants it, let me know.  It is done in a sauce of salsa and apricot jam.  Oh so good and on the table in 20 minutes.  I serve this over rice usually.

Bakery --- YOU posted that great pork recipe?   Thank you!!  I think you should post it again because it's sooooooo good and so easy.   I make it frequently for just me.  The leftovers are even better than the first serving.  I really appreciate that recipe.

A white sauce is made and hard boiled eggs the whites are chopped up and added to the white sauce this is poured over toast then the yolks are push through a sieve and the yolks now look like golden rod dust or pollen on top of the white sauce mixture.This is a very old recipe when the dinosaurs roamed the earth as my kids always tell me! lol Same thing as sausage gravy or creamed chipped beef on toast aka  (SOS)

Nancy, this recipe works well for chicken, as well as for pork.  I like both meats in the sauce.

APRICOT SALSA PORK AND/OR CHICKEN

For Chicken:

1/2 cup all purpose flour
1 tsp salt
1/4 tsp pepper
6 skinless chicken breast halves (about 1 1/2 #s)
3 Tbs vegetable oil
1 jar (16 oz) salsa  - adjust to your own taste
1 jar (12 oz) apricot - adjust to your own taste
1/2 cup apricot nectar (I find that O.J. works just as well)

In a shallow bowl, combine first four ingredients.  Add chicken; turn to coat.  Brown chicken in oil in a skillet.  Stir in salsa, preserves and nectar or O.J.  Bring to a boil.  

Reduce heat and simmer uncovered for 15 minutes or until sauce thickens and meat juices run clear.  Serves 6

For Pork

You can use pork tenderloin or a pork loin.  Cut the pork into 1/2 inch medallions.  Brown in oil in a fry pan.  Make the sauce as above using salsa, preserves and O.J. or apricot nectar.  Pour over the pork and simmer until the sauce thickens and the meat is cooked through.  The longer you simmer this, the thicker the sauce becomes.  

I estimate that you simmer it about 15 minutes but to simmer it longer doesn't toughen the meat.

Gee - I'l love some of bakery1's Apricot/Salsa on pork chops .. that's GOOD

I'm home from cleaning at church ..... a slow, quiet day ahead ... It's chilly but I'm still going to grill two gorgeous steaks.  I'll have one tonight with baked potato, refried beans and a lovely salad.  Tomorrow I'll thinly slice the second steak and broil sandwiches.

I made it with chicken the last time you posted this and it was delicious.I still make your peach bread pudding my hubby loves it.

Our store here has corned beef  and ham from the deli for $ 3.99 a pound so tonight it will be Rubin's on the panini press along with homemade fries.My son is at school right now but when he comes home he can start cutting fries.I have this great little gadget that cuts them but you have to put a little umph into it and my umph got up and left lol!

well i had the last of my chicken and noodles for lunch

and for dinner, i'm taking a friend out to a small town north of here (about 40 miles) for the best chicken fried steak in texas at a little diner/dive that my b.i.l.'s niece owns and unless i can talk her into splitting one
i'll probably have a  steak sandwich tomorrow,              which is not a bad thing
