I had a small salad and a bit of chicken salad.  I splurged and had a truffle that I made a while a go.

 Hi Nancy. well, what i've been doing is going through all the Chinese chicken salads until I find the one I like best. I chose out three to try and see if they are good. I have one from Kraft.com. I like going there because Kraft has all the jello & pudding ideas & let's not forget they make marshmallows! I have one from Betty Crocker (can't live without Betty!) And one from a site called Eatbetteramerica.com. I like this site as they do all the food made in a healthier way & they have the nutrition there for you to read. The one I tried last night was this one from Bettycrocker.com. I think that this one was good. Any Chinese food is made better by sesame oil! Have you ever tried it? It's the secret ingredient that the restaurants use as I found out from my friend that works in a restaurant. I put that oil on plain brown rice & yummy! so here's Betty Crocker one. The only thing I changed was the added chicken pieces lightly stir fried in sesame oil then added.

                                            Chinese Chicken Salad

tablespoons butter or margarine
1
package (3 oz) oriental-flavor ramen noodle soup mix

tablespoons sesame seed
1/4
cup sugar
1/4
cup white vinegar
1
tablespoon dark sesame oil
1/2
teaspoon pepper
2
cups cut-up cooked chicken
1/4
cup dry-roasted peanuts, if desired
4
medium green onions, sliced (1/4 cup)
1
bag (16 oz) coleslaw mix (8 cups)
1
can (11 oz) mandarin orange segments, drained
  • 1 In 10-inch skillet, melt butter over medium heat. Stir in seasoning packet from soup mix. Break block of noodles into bite-size pieces over skillet; stir into butter mixture. Cook noodles 2 minutes, stirring occasionally. Stir in sesame seed. Cook about 2 minutes longer, stirring occasionally, until noodles are golden brown; remove from heat.
  • 2 In large glass or plastic bowl, mix sugar, vinegar, oil and pepper. Add noodle mixture and remaining ingredients; toss. Serve immediately.

i have a 5 lb pork 1/2 loin defrosting now
my cleaning lady is coming by later to help me cut it up and share it
probably in chops       not sure what i'll end up making today           but i'll probably cook some of it to re-freeze for another day

it's one i bought in oct on sale for 1.79        i send them to my son's freezer
they had them on sale again last week for 1.49 and i  picked up 4 more     and took them down to freeze         and picked up the oldest one in the freezer to use

We're having a hamburger/rice casserole tonight.  We have a loaf of freshly baked wheat bread to enjoy with it - at my husband's request.

Cut some of the chops double thick.  Make a slit in one side almost all the way through and then open it up a bit.  Now stuff it with a regular stuffing. I add apples and cranberry to the stuffing.

Dinner tonight again will be a salad and a bit of the Chicken salad I have.  Need to use it or toss it and it is too good to toss.
I also have 3 more of the truffles staring at me and I just might have to put one of them out of their misery. ;)

I don't have a clue ...... this computer and my phone have been on and off - usually off - all day.  A Charter repairman just got it turned back on and he's inspecting everything.  It's time for me to be heading to church.   I don't think I'll make it tonight :^(

We're going to a local fish fry tonight.  I always look forward to these nights, no cooking, lots of people to talk with, and no dishes to clean up!
