Finally home ---- ahhhhhhh --- with empty spaghetti crusted crock pots to scrub.  It's been a long, hard day.  I'm so pleased that I have left-over spare ribs for dinner.

We are having hamburgers cooked on the grill, along with potato salad.  I used my Mom's recipe for the potato salad - it's our favorite and brings good memories of her to our minds and table discussion.

I noticed that two of you listed egg plant in your meals.  I have not had egg plant since I was a child and I did not like it in the least, but had to stay at the table until I had at least three bites - pure torture for a young child!  I am beginning to think that I should give it a try again, but not sure how to prepare it.  Maybe roasted with something else tasty along with it?

I cut the eggplant drizzled with a bit of olive oil sprinkled with salt and pepper. Tossed in a few onions and peppers that I chunked up.  Roasted that at 350 until they began to get soft.  I then added in a few zucchini and tomatoes that I chunked up.  Stirred it all around and continued to roast until all was tender.  I made some couscous to go with it.  Sprinkled a bit of cheese on top and dinner was served. 
Tell the truth you don't even know the eggplant is there looks and tastes pretty much like mushrooms. 
I served this with lamb as a side dish for company but last night it was the main meal for dinner. 
I would have slice it, breaded it and fried it for a Parmesan but wanted to cut the calories a bit for this meal.

Nikki - Thank you for your posting about eggplant.  I have grown to love mushrooms, so maybe I would enjoy eggplant now.  I have become a lot more adventurous with trying foods the older I get, but I have shied away from eggplant.  The way you prepared yours sounds delicious.

Nancy - My Mom's potato salad is very easy.  Sliced, boiled potatoes, lots of hard boiled eggs, chopped celery, chopped onion, a bit of mustard, a bit of brown sugar, salt and pepper to taste and Miracle Whip to hold it all together.  It's what I grew up with and tastes like "home" when I make it.

Thanks, Cheri --- that sounds very much like mine except I've never used brown sugar instead of regular "white" -- I will try it with my next batch of potato salad.  I use boiled eggs just when I'm making it to take somewhere - I'm too lazy to do it for myself.   Miracle Whip is the important part.!

 chocolate milk&  brownies
DINNER: leftover  casseroles from the freezer:

  hotte&  frozen yogurt tubes

  I've never heard of anyone adding any kind of sugar to potato salad
also, I don't add celery      plus I use  some  del-dixi sweet pickle relish in mine , otherwise it's basically the same

I've had trouble loading the forum this a.m.   then I had to go to sam's   I had breakfast at Whataburger
and i'm having the last of that Dorito chicken casserole I made Saturday
yesterday I had to see the dentist because I thought I had broken a tooth saturday
but I had just lost a large filling which he replaced     but that "dead lip" lasted much longer that I remembered

I hoped for a good, quiet, long day at home, so early this morning I ran to church to do a tiny bit of much-needed work.  I was pulled into a large pile of hard work and just got home.   I think I'll take myself out for dinner ---- Chinese!!

We've had a busy day, so we will have scrambled eggs, bacon and toast.  I have the bacon cooked already, so when we're ready to eat dinner prep will be quick.

Tonight..easy, leftovers from yesterday. 
Pulled pork sandwiches, potato salad, broccoli salad and he will have a piece of the pumpkin crunch cake.  I will hold off on the cake, unless I forego the bun for the sandwich.

I'm really looking forward to my steak ---it's 1 PM -- I could start it now - lol ..... But, Nikki, your pulled pork sounds so good.  
I've forgotten where it came from but I recently got a recipe for pulled CHICKEN. I have to try that soon.
