Peach bread pudding, as this was the requested dessert when I asked hubby what he'd like me to bake for Father's Day.

A friend of mine gave me a Rosemary plant and I have been loving using fresh rosemary.
I found a recipe on this site for a Rosemary Pie so I thought I would make it for dessert tomorrow.
I tasted a bit of the chocolate and it is great!  the Rosemary is not very strong just a bare hint and it is wonderful with the chocolate.

Desert tonight is melon.  I found a beautiful yellow melon today and it tastes great.  Never had one before and it won't be the last.

Nikki -- please, what sort of yello melon did you like?
Last summer I bought some sort of rough/wrinkled (?) yellow melon and I can't remember the name.  Something like Thomas in it??
Anyhow- I did not like it at all.  I tried to eat some of it but ended up tossing the whole thing.
I DO have a lovely watermelon waiting

The yellow melon is a beautiful Golden yellow I do not recall what the sign said it was I will have to go back and get another and I will make note of the kind.  I just might take a few seeds and try to grow one but it might be like so many other varieties of fruits and vegetables that the seed is nothing like the plant it came from thanks to hybridizing.

I think maybe tonight I will make a mango-pineapple smoothie.  Just saw an ad on-line that McDonalds has these.  But mine will be so much better since I don't have to go for it lol.

I'm new to this forum and look forward to sharing recipes with everyone. 

Here is a recipe that I plan to try tonight or tomorrow before everyone shows up for the Father's Day feast.

    

Raspberry chocolate brownies

  • 1 box chewy fudge brownie mix
  • 1 3.13 oz, chocolate pudding mix
  • 3 eggs
  • 1/4 c. water
  • 1/2 c. veg. oil
  • 1 c. raspberry jam
  • 1/2 pint fresh raspberries

Preheat oven to 350. Coat 9x13 pan with cooking spray. In large bowl, mix together all ingeredients exceot for jam. Beat well.

Transfer batter into prepared baking pan. Drop jam by spoonfuls over batter and swirl through with a table knife. Bake for approx. 28 minutes or until done. Cool in pan; cut into squares.

Makes about 24, Serve topped with fresh berries.

Here I am not being able to sleep,legs hurting.I'm not sure yet what is for dessert.Being Fathers day it's his choice.He said he will let me know I hope not too long.I bet he wants to go for ice cream.

I got up to pack hubby's lunch and I think I'll get an early start on dessert.No bake cheese cake with fresh strawberries and glaze.Very easy recipe and always well received where ever it goes.

I went back and got another melon  It is a Golden Honeydew.
Pleased to say the sticker says it is a product of the USA
The rind is a golden yellow and the flesh is a pale color almost white. 
The flavor is sweet and mild a bit like a honeydew crossed with a cantaloupe.

No Bake Strawberry Cheese Cake,I made two yesterday and still have a whole one left.Hubby and I will have a piece and my son will gladly eat the rest.When he was eight years old I came downstairs the one morning after making a couple of these no bake cheese cakes the night before to discover my little boy devouring an entire cheese cake lol .I just couldn't believe my eyes.I usually cut an 8" cheese cake into 6 slices.He ate the whole thing.He walks with the dog everyday about a 4 mile walk so he burns it off.Oh to be young again!
