I was cleaning refrigerator Yell and found a 3 cup pkg of pecan halves.  To avoid more work (I've been working all day) I decided to make sugar and spice pecans ..... oh, they are good - they are GREAT.    I'll gobble them tonight and have no other dessert.

Surprised Really no coffee ! Coffee cakes get their name from what they are usually served with.They are a rich,less sweet cake,often made with sour cream and /or butter and have a streusel topping such as nuts,oats,sugar ,butter,flour and cinnamon.Or even just drizzled with a glaze.This is one of my favorite types of cake.

A selection of cream puffs A vanilla filling, some with a chocolate filling and since I/we made lasagna I had some extra ricotta so I am flavoring the ricotta, a bit with almond and a bit with vanilla so people can fill the cream puff with any filling they wish.
Think I have developed the first cream puff buffet!
It could be a new restaurant concept.  People select cream puff shells either savory or sweet and fill with a wide selection of items from creamed chicken, beef stew, seafood, turkey and gravy then on to any number of dessert options.

Crepes filled with sweetened homemade ricotta cheese and topped with strawberries and glaze and a dollop of whipped cream.Oh so good!

Hello Gale!
 I know it is suprising with no coffee...
but what i do to enhance the coffee flavor is to but 1 Tablespoon of coffee with that glaze.
And maybe replace i with different fruits or berries like blueberries,strawberries....then add flavored juice or extract or syrup  to the glaze that matches the fruit flavor!

Gale, about the apples, I found a recipe I want to try called Crescent Roll Apple Dumplings.  They are made in a similar manner as the Peach Enchiladas.

2 cans refrigerated crescent rolls (8 count per can)
3-4 apples, peeled and cut into 8 wedges
1 cup butter
1 1/2 cup sugar
1 tsp cinnamon (adjust to your taste - I prefer to add a bit of nutmeg and a little less cinnamon)
1 (12 oz) Mountain Dew

Heat oven to 350 degrees.  Lightly grease 9 x 13" baking pan.

Seperate dough into 16 triangles.  Place apple quarter on shortest side of triange.  roll up, strting at the shortest side and rolling to the opposite point.  Place seam side down into baking pan.

Melt the butter, stir in cinnamon and sugar.  Spoon evenly over each crescent rolled apple.

Pour Mountain Dew over all.

Bake 35-45 minutes until apples are tender.  Top with ice cream or whipped cream.

On my previous post about the apple dumplings, I think it is confusing the way the recipe tells you to roll up the crescents so I would rephrase it to say, "Place apple quarters on small end of triange.  Roll up, starting at the small end to the widest end of the triangle".  Hope that reads more clearly.
