I am not sure what to make for a beach party next week. I need something refreshing and good in hot weather! Any ideas???

Beach party sounds like fun Emily.  Fruit salad is always refreshing.  With all the berries now getting ripe, that would be a good choice.  Toss in some watermelon and grapes and it's done.  I like yogurt dip with my fruit but unless you have a cooler to keep it in, might not last too long in hot weather.  Have fun Emily.

Emily - Fruit salad sure sounds better ...... It sounds BEST.
i suggest a big container of cookies .... many different kinds and flavors.  They will stay fresh all day and be available any time.

Are you going to have refrigeration available or are you relying on coolers?
If you do not have refrigeration you might want to go with a bar cookie.  I have always loved the 7 Layer or Magic cookie bars.  I have another that is very good , if you like chocolate.
Double Chocolate Fantasy Bars
1 (18.25 ounce size) Chocolate cake mix
1/4 Cup vegetable oil
1 egg
1 Cup chopped nuts
1 (14 ounce) can Sweetened condensed milk...not evaporated
1 6 ounce package semi sweet chocolate chips
1 tsp vanilla extract
dash of salt
Pre heat oven to 350 degrees F.
Grease or line with parchment paper a 13X9 inch pan
In a large mixing bowl combine cake mix, oil,and egg; beat at medium speed until crumbly.
Stir in nuts.
Reserve 1 1/2 Cups of the mixture.  Press the remaining mixture into pan.
In a small sauce pan over medium heat combine remaining ingredients.  Cook and stir until chips melt.
Pour chocolate mixture over crust.  Sprinkle reserved crumb mixture over the top.
Bake 25 to 30 minutes or until set.
Cool.
Cut into bars.
Store covered at room temperature.
If you line the pan with parchment make 2 sides longer so you can easily lift the cooled bars from the pan.  Makes it much easier to cut that way.

This is another that is great.
Toffee Bars
1 Cup quick cooking oats
1/2 Cup all purpose flour
1/2 Cup packed brown sugar
1/2 Cup chopped walnuts
1/2 Cup butter or margarine, melted and divided
1/4 tsp baking soda
1 (14 ounce) can Sweetened condensed milk
2 tsp vanilla
2 Cups ( a 12 ounce bag), semi sweet chocolate chips
additional walnuts if you want.
Pre heat oven to 350.
Grease or line with parchment a 13X9 pan
In a large mixing bowl combine oats, flour, brown sugar, walnuts, 6 tablespoons of butter, and baking soda.  Mix until crumbly.
Press firmly on bottom of pan. 
Bake 10 to 15 minutes or until lightly browned.

In a medium saucepan over medium heat combine the 2 tablespoons of butter and the sweetened condensed milk.  Cook and stir until mixture thickens slightly, about 15 minutes.
Remove from heat and add vanilla.
Pour evenly over baked crust.
Bake an additional 10 to 15 minutes or until golden brown.
Remove from oven and immediately sprinkle chips over the top.  Let stand 1 minute; spread chips while still warm.
Garnish with additional nuts if you like pressing them down.
Cool completely.
Cut into bars.
Store at room temperature.

BBQ on the beach is fun too! Hot dogs,burgers.brats or whatever.Corn is great roasted in the husk after it's soaked so it doesn't burn.All the other ideas sound great too.They do sell disposable one time use BBQ grills.We often take subs with us on our outings along with mac or potato salad.Fresh fruit salad,with all the melons,grapes,canned pineapple or fresh,mandarin oranges is always a favorite.Cookies and brownies are a pick up and eat dessert.
