This is a great time of year to learn about pumpkins.
The jack-0'-lantern variety of pumpkins is already being sold at local stores.

I use  a lot of pumpkin duing the winter . I have never canned it althought.
My kids always make jack-o-lanters for my front porch. That is always a fun
time with them and my grandchildren.

Thanks Nancy,I'll check that out later.I always cook our Jack-O-Laterns and puree them. They might not be as sweet as a pie pumpkin but they work.I freeze the puree in freezer bags after they thaw I stain any liquid there is out and it still makes a decent pie.My mom always did that when we were little and I've always done it since my kids were little and I still continue today. My son's love toasted pumpkin seeds.I do follow the recipe for the "LIBBY"S pumpkin pie even when I use my own pumpkin.I have read somewhere that Libby is the only one that have the seeds to the type of pumkin that they use. They are also are the largest pumpkin producers in the world.
