I am looking for a good, creamy Cheesecake recipe!
 
I know I can google for one, but I was hoping one of my VBB friends has one; then I know it will be good!

This is the best cheesecake and easy!  I've had this recipe for years.  It always turns out great.

3 pkgs of cream cheese (8 oz bricks - you can use regular or the reduced fat)
6 eggs
1/2 cup plus 2 T flour
1 1/2 cups whip cream (I use half and half which turns out great to reduce the richness)
1 t vanilla
dash of lemon juice

Crust - you can use a graham cracker crust of - 1 3/4 cups graham cracker crumbs 1/3 cup melted margarine or butter and 1/4 cup sugar 
BUT
my favorite is this crust -

1 cup flour
1/2 cup nuts (optional)
1/2 cup brown sugar
then cut in 1/2 cup margarine or butter
Bake 400 degrees for 12 minutes and needs to be cooled a bit before cheesecake mixture is added.

Allow cream cheese to soften to room temperature.  Mix cream cheese until creamy, then remaining ingredients.  Place in a spring form pan in a larger pan (such as a bottom of a broiler pan) and place on oven rack.  Add boiling water to the outer pan to about 1 inch depth.    Bake at 350 degrees for 1 hour or until a soft brown color.  Turn oven off and let cake remain in oven for additional 30 minutes with oven door closed.  Allow cake to cool a bit then chill.  Add your favorite topping.  Keeps in refrigerator for several days.

Oooo, this sounds wickedly good, especially the second crust recipe, to which I would definitely add the nuts.

Oh my, this sounds wonderful and I will try making this recipe. 

There is an elderly man that is in the RC flying club with my husband.  His wife always made him cheesecakes because that was his favorite.  Well, she passed away about a year ago and last week he asked me if I made cheesecakes because he knows I love to bake.  I didn't have any recipes for cheesecake, although cheesecake is one of my favorite, so I thought I would make one for him.   He misses his wife so much...it's sad!

Cheesecake can be intimidating but are really very easy.  Just treat them like you would a custard pie. They are more pie like than cake like.  Gentle heat and for best results use a water bath. If you are using a springform pan wrap the outside of the pan with a layer or two of aluminum foil.

I have a Jr"s Cheesecake recipe book here is a recipe from the book.
This recipe has 2 parts.  The sponge cake layer and the cream cheese filing layer.
Let's start at the bottom.
Sponge Cake Layer
1/2 Cup sifted cake flour
1 tsp baking powder
pinch of salt
3 extra large eggs, separated
1/3 Cup plus 2 Tb sugar
1 tsp vanilla
3 drops pure lemon extract
3 Tb unsalted butter, melted
1/4 tsp cream of tartar
Pre heat oven to 350 degrees F. Generously grease a 9 inch spring-form pan.
Sift the cake flour, baking powder and salt together in a medium bowl and set aside.
Beat the egg yolks together in a large bowl with an electric mixer on high speed for 3 minutes.  Then with the mixer still running, gradually add the 1/3 cup of sugar and continue beating until thick and light yellow ribbons form in the bowl, about 5 minutes.  Beat in vanilla and lemon extracts.
Sift the flour mixture over the batter and stir it in by hand until no more white flecks remain.  Then blend in the butter.
In a clen bowl, using clean dry beaters, beat the egg whites and cream of tartar on high until frothy.  Gradually add the remaining sugar and continue to beat until stiff peaks form.  Stir 1/3 cup of the whites into the batter, then gently fold in the remaining whites. (don't worry if some flecks of white remain)
Gently spoon batter into the prepared pan.  Bake the cake just until the center of the cake springs back when touched, only about 10 minutes.  Let the cake cool in the pan on a wire rack while you continue to make the cheesecake filling..  Do Not Remove the cake from the pan.

Cream Cheese Filling
4 packages, 8 ounces each cream cheese The regular kind not light, at room temperature.
1 2/3 Cups sugar
1/4 Cup cornstarch
1 Tb vanilla extract
2 extra large eggs
3/4 Cup heavy whipping cream
Place an 8 ounce package of the cream cheese, 1/3 cup sugar and the cornstarch in a large bowl.  Beat with an electric mixer on low until creamy, about 3 minutes, then beat in the remaining cream cheese.
Increase the speed of the mixer to high and beat in the remaining 1 1/3 Cups of the sugar, then beat in the vanilla.  Blend in the eggs one at a time beating well after adding each one.  Blend in the heavy cream.  At this point, mix the filling only until completely blended. Be careful not to over mix the batter.
Gently spoon the cheese filling on top of the sponge cake.
Place the spring-form pan in a large shallow pan containing hot water that comes about 1 inch up the sides of the pan.  Bake the cheesecake until the center barely jiggles when you shake the pan, about 1 hour.
Cool the cake on a wire rack for 1 hour.  Then cover the cake with plastic wrap and refrigerate until it is completely cold, at least 4 hours or overnight.  Remove the sides of the spring-form pan.  Slide the cake off the bottom of the pan onto a serving plate.  Or if you wish leave cake on the removable bottom.
If there is any cheese cake left over wrap in plastic and refrigerate.

The cheese cakes can be topped with any number of sauces, strawberry, blueberry. 
There is also a recipe for a chocolate swirl cake. Additional ingredient:
 3/4 Cup Fudge ice cream topping (the thick kind in a jar)
Directions are to spread half the cheesecake batter in the pan warm the fudge topping drizzle it over the filling, carefully add teh rest of the cheese cake batter then swirl a knife through the batter until it is marbled.  Bake time increases by about 15 minutes. Place a piece of aluminum foil over the cake after 45 minutes leave foil on for the remainder of bake time.
