Here is a no bake cheesecake recipe that I have been making for years and everyone seems to like it. 1 ready crust,I like the shortbread ready crust, 2- 8oz.cream cheese, 1 teas. vanilla, 1/2 cup sugar,1 cup boiling water, 1 envelope Knox gelatine Beat cream cheese until soft, blend in vanilla. Stir sugar and gelatine in boiling water until completely dissolved about 5 min.Slowly mix into cream cheese until smooth.Pour into prepared pie crust and chill for at least 3 hrs.I always top with cherry or blueberry pie filling.I always make 2 cheese cakes, just double the ingredients ,one can of pie filling  will top 2 cheese cakes.

Gale, Thank you for cheesecake recipe! I have printed it. Looks great and easy
to make.  I made the Italian Love Cake for Father's Day! It was a big hit with all
13 of us.  I added Nestle's mini choc. chips to the top of the cake. Did it ever
look pretty!!

You are welcome, the cheese cake is very good, especially on hot summer days, not having to heat up the house with the oven.I'm glad you all liked the Love cake, that's kind of like a cheesecake.I'm sure it looked great with the chips on it and tasted good too.

Hi Susan, the recipe is super easy and very creamy, all it is is cream cheese and not too sweet either.I love the shortbread ready crust when I can find it.Graham cracker crust is good also. It's a good hot weather recipe not having to heat up the oven.

Carol, You have intrigued me twice on this...what is an Italian Love Cake? Anything like a cannoli (the pastry type thing not the pasta)

Nikki,  Sorry I took so long to get back to you, we were camping!  The Italian Love Cake is posted by Gail
under Chocoholics Anonymous on the first page. The first time that I made it, I used a choc. cake mix and
the second time, I used Betty Crocker Triple Choc Cake mix. You can never have too much choc.  I also
added the Nestles semi-sweet mini choc. chips on the top!! All 13 of us loved it on Father's Day!!

This is the best cheesecake and easy!  I've had this recipe for years.  It always turns out great. 3 pkgs of cream cheese (8 oz bricks - you can use regular or the reduced fat) 6 eggs 1/2 cup plus 2 T flour 1 1/2 cups whip cream (I use half and half which turns out great to reduce the richness) 1 t vanilla dash of lemon juice Crust - you can use a graham cracker crust of - 1 3/4 cups graham cracker crumbs 1/3 cup melted margarine or butter and 1/4 cup sugar  BUT my favorite is this crust - 1 cup flour 1/2 cup nuts (optional) 1/2 cup brown sugar then cut in 1/2 cup margarine or butter Bake 400 degrees for 12 minutes and needs to be cooled a bit before cheesecake mixture is added. Allow cream cheese to soften to room temperature.  Mix cream cheese until creamy, then remaining ingredients.  Place in a spring form pan in a larger pan (such as a bottom of a broiler pan) and place on oven rack.  Add boiling water to the outer pan to about 1 inch depth.    Bake at 350 degrees for 1 hour or until a soft brown color.  Turn oven off and let cake remain in oven for additional 30 minutes with oven door closed.  Allow cake to cool a bit then chill.  Add your favorite topping.  Keeps in refrigerator for several days.

Vicky...

I got the ingredients to make this recipe and I will let you know how it gets!   I am anxious to see what the elderly man that flies RC planes with my hubby has to say when I give it to him.  He told me that he and his wife were high school sweethearts.  He also shared with me that when she had Home Economics, she would give him the goodies that she baked.  How sweet is that!!

Thanks again!
