This is the best cheesecake and easy! I've had this recipe for years. It always turns out great. 3 pkgs of cream cheese (8 oz bricks - you can use regular or the reduced fat) 6 eggs 1/2 cup plus 2 T flour 1 1/2 cups whip cream (I use half and half which turns out great to reduce the richness) 1 t vanilla dash of lemon juice Crust - you can use a graham cracker crust of - 1 3/4 cups graham cracker crumbs 1/3 cup melted margarine or butter and 1/4 cup sugar BUT my favorite is this crust - 1 cup flour 1/2 cup nuts (optional) 1/2 cup brown sugar then cut in 1/2 cup margarine or butter Bake 400 degrees for 12 minutes and needs to be cooled a bit before cheesecake mixture is added. Allow cream cheese to soften to room temperature. Mix cream cheese until creamy, then remaining ingredients. Place in a spring form pan in a larger pan (such as a bottom of a broiler pan) and place on oven rack. Add boiling water to the outer pan to about 1 inch depth. Bake at 350 degrees for 1 hour or until a soft brown color. Turn oven off and let cake remain in oven for additional 30 minutes with oven door closed. Allow cake to cool a bit then chill. Add your favorite topping. Keeps in refrigerator for several days.

There is an elderly man that is in the RC flying club with my husband. His wife always made him cheesecakes because that was his favorite. Well, she passed away about a year ago and last week he asked me if I made cheesecakes because he knows I love to bake. I didn't have any recipes for cheesecake, although cheesecake is one of my favorite, so I thought I would make one for him. He misses his wife so much...it's sad!
