Verlee - I was looking around the candy recipes and read that you like making Almond Rocca.  Wow ..... Please, could I have that recipe?

Verlee - here's my recipe for SUGAR N' SPICE WALNUTS  (I use pecan halves) 2 1/2 cups walnuts 2 cups sugar 1/2 cup water 1/2 tsp. salt 1/2 tsp cinnamon  (I love cinnamon so use a bit more) Combine sugar, water, salt and cinnamon in large saucepan.  Low to medium heat to 236 degrees (soft ball stage). Pour in nuts and stir 'til creamy.  (for me it seems to take stirring forever  so I boil until 240 and try to be energetic and patient) Dump everything onto wax paper and separate into clumps with two forks. I've made this with a mixture of all sorts of nuts, pecans, walnuts, Brazil, whole almonds, cashews. ............................................................................................................................................ Here's the sugared nut recipe I used for years until I found the other one SUGARED WALNUTS 1 cup brown sugar 1 tsp grated orange peel 1/2 tsp cinnamon 6 Tbls milk Boil to soft ball stage.  Add 1 tsp vanilla. Stir in walnuts, dump onto wax paper

OK I love Almond Roca.  I will try this recipe but Verlee I had to laugh...Can you tell me how you can get it to last a month? The Spiced Nuts also look very good and I think they would also be great done with almonds but the mix sounds very good as well. Both "dangerous" recipes to have. Than you for sharing.

I know, Nikki, it's hard to keep the Roca for a month. I do disguise the container and hide it from my husband in the vegie drawer! So far this has worked for 3 years. lol

Ahhh..hide it in the veggie drawer...no one looks there! But the problem is hiding it from ME! Although the freezer works once I put something there I do ignore it for a while.
