I make jelly roll cakes filled with ice cream and make up different sauces aften. I thought I
would pass on this idea to others. Its not as hard as everyone thinks. Its all in the timming
instead of a cream cheese filling
Soften vanilla ice cream or use kitchen aid mixer to soften just so you can spread it, not melted or cake will get mushy. You could add freshly cooked cranberries (cooled) mixed in ice cream, nuts.
Roll cake as in directions, dust parchment paper with powder sugar, wrap cake and wrap again with saran wrap.
Put into freezer for 1 hour or until desired firmness.
IMy family and freinds love it when just the ice cream gets firm, the cake still soft not completly frozen
